Hi, professional bagel baker here, and I kept yelling at the screen "make the holes bigger!" 🤣 Your technique is fine. Just allow more room for the dough to expand into the hole during the second rise. They won't look right going into the oven, but they will bake more evenly and the hole will develop the proper size.

Black Bean Harvest Tip- Place them into a large brown paper bag, put your garden gloves on and go to town breaking them up with your hands. The Chaff will all be at the top for easy removal. When you "Winnow" outside you can use an electric fan or a hair dryer on low. You can tell how much wind you need. Makes quick work of those Beans. * Looked to me like your fritters just needed more apples. Great video!

As a recovered Southerner who was raised on deep fried you name it, you need a bigger pot (think your Dutch oven), and much more oil. The fritters should float like your bagels did in the water. Also, make them smaller as others have said. Regardless, I bet they were delicious!

Hey, Becky! I made a ton of apple fritters with my grandmother when I was younger and the biggest differences that I see are: 1. We used enough oil that the fritters were floating and not touching the bottom of the pan. 2. Our fritters were much smaller, more like doughnut holes, than full-size donuts. That way, you get a lot of the crispiness in each bite. It also made us waste less. You could choose how many to eat rather than committing to such a large fritter. Other than that, it was a beautiful first attempt, and they looked delicious! The apple size looked perfect to me! Thanks for sharing! I will for sure be making these bagels soon!

Yep, if there is enough oil for them to float then more of the fritter will be able to cook. You limited the height of what could get cooked each time.

I use an electric fry pan to fry doughnuts, funnel cake, churros, etc. that way you can set the temp and keep the correct temperature. A fry thermometer and slotted spoon or spider would be helpful, as well as more oil.

I also put a cooling rack on top of a rimmed baking sheet so any excess oil can drain and you won’t have a soggy bottom.

I drop apple fritters into the frying oil by the cookie scoop full, it's a perfect mini donut/donut hole size, it doesn't make a huge mess, and they cook through so fast 😊

I saw a trick for shelling beans or hulling corn. It looked really handy. Pop a towel in the bowl before you start and it stops it from bouncing out. Then when you're done, pull the towel out carefully. :)

to shell your beans easily or should I say more efficiently, try this. When you pick the beans, using your thumb nail slice along the crease on the tip of the bean. What this does is make the bean casing pull back towards the stem end when it dries. This deposits the beans themselves out of the casing. If you then put these beans to dry on something that will catch the beans. I live in Australia in a very hot and dry location so I just put them in a cotton pillowcase and hang them up. To harvest all you need do is shake the beans violently to drop the beans out into the bottom of the bag. You can thank me later.

Becky, growing green beans on the arched cattle panels makes them dangle and they are not only pretty but easy to harvest. Put one butter nut squash on one side and one cucumber on the other. Just be sure to visit then frequently to get them started up the panel. After that they will do it all on their own.

the first time I tried to make something with flour, it was pancakes. I wanted to bring breakfast in bed for my parents. I was probably ten? Anyway, I accidentally dropped one and I kid you not, it bounced. It actually bounced. lol. The dog turned her nose up at it too and gave me an insulted look. I still took the rest of the pancakes to my parents with coffee on the side. And they were so pleased and ate them with smiles and complements. Bless their hearts.

My suggestion is about your black beans. I would can all the old ones from previous years and save seed for planting from this year’s harvest. Not only are the new seeds fresher, they are also more acclimated to your area. I love your videos!

Our grandmothers and mothers made jams and chutneys/pickles in boiled jars with metal lids but luckily our country produces fresh produce year round. I live in S E Queensland and can grow all year. I do get some frosts but I just cover the gardens with fine netting when they are forecast and it does the trick. We are blessed in that way. I dehydrate but we weren’t bought up with pressure canning and freeze drying. I love to watch it.

My mother-in-law used to shell her dried beans in the most creative way. Seems strange but it works wonderfully. Take an old pillow case. Put your dried beans in the pillow case and secure the opening by tying or using a hair band. Throw the pillow case with them in it into the dryer on a very low or no heat. The dried shells will separate from the beans and the heavier beans will then go to the bottom and can be separated easily.

Hi, just a thought to have preserved patatoes. You can frees dry some and the grind them into powder. And the when you want mash, use the freeze dried ones by hydrating it with hot milk and butter.

As far as the apple fritters I find that you have to make them smaller and flatter or even like scooped into meatball size or they will be uncooked in the center… I think the raw apples are moist enough and put off more moisture as they cook that it keeps the dough wet. Also you need deeper oil so that the fritter can float and be more surrounded by the oil ( where it can sort of float over the top a bit before turning even). I haven’t made bagels in ages but you made me want to do it again!! Yum!

I was going to say the same. I deep fry occasionally, and I also have a gas stove. I'm a firm believer in a deeper pot for safety sake. It's so easy to accidently 'slop' a bit of oil over the side of a shallow pan, and poof - you'd have a fire on your hands. You could use your dutch oven to deep fry in - and you could add a bit more oil that way and be safer at the same time :) Also, smaller fritters are better for getting them to cook all the way through. The end result looked yummy though! Well done for trying new skills!

Becky one of the ways I love to store potatoes is when I peel and dice potatoes, onions and peppers. I flash freeze the mixture then vacuum seal in portions. Some I mince fresh herbs into. Some I leave plain. It is definitely a time saver when we want home fries or hash or even roasting as a side for dinner. These last two years we've grown 100 lbs of potatoes each year. There is only so much potato 2 people can eat.

Reciently I've been baking my small potatoes in a large cast iron skillet using bacon drippings on the bottom of the skillet and rubbing some drippings on the potatoes skins,and add salt... Bake at 350, until tender. I love dinners I can shove into the oven. The potatoes baked this way are so good and easy.

My mother was a professional baker and one thing she instilled in me is to never cross contaminate food products by sticking your wet or food on hand product into a clean bag of product (like flour) or a bucket of food, a bowl of food, or the like. Anything on your hands can contaminate a whole product quickly that would be used for a future product. I was taught to place a small bowl of flour, water, or oil next to what I was making and take from that bowl only to not cross contaminate. It's good practice to work from a bowl and not a bag of flour or plastic container of flour (or other product that would be added into what you are working on). What product is left in the bowl can be disposed of.

There are two types of pastry that are my nemesis Flaky and Chou. I just love your channel it's down to earth and its giving me new ideas. Hey Becky! A simple trick with shelling your beans…. Put them in a pillow case and and give ‘em a few smacks with your meat mallet. The pods pop right open and the beans fall out. It’s easy to just remove the empty pods. And then just winnow the beans to remove any of the lighter chaff. This works really well if the pods are dry. If you have any that aren’t quite dry you might have to shell those ones by hand.

You can add a little more flour to your fritter batter, add a little more oil and spoon them out smaller. Awesome first try!

Hi Becky! Learning new skills can be scary sometimes, so I get it when you feel empowered by gaining new skills 🤍 Here's some tips from someone who makes fritters a lot: 1. Flour is only a binding element, so you don't need much of it! With minimum batter, you can let your main ingredient shine ✨ 2. A slurry batter creates crispier fritters. You can add water or milk or coconut milk (for extra umami) to your liking to create runnier batter. 3. Rice flour also helps for crispier fritters, but don't add too much because it will create tougher fritters! I use ratio 1:3 on rice flour to all purpose flour. 4. Baking powder is your friend, so don't be shy 5. Make sure the oil is hottt before putting in your batter. You can test by dripping your butter and if it floats instantly means your oil is ready. Good luck for your fritters journey 😁

I posted my comment before hearing you ask for tips on how to make the fritter recipe better. Ok, add your cinnamon and sugar and salt to your apples and let them hang out in the fridge to marinate. Say for 15 min. You will get the apples to ooze out some juice so your dough will be thinner in the end but they’ll puff up and cook through once it hits the oil. Also Substitute buttermilk for milk - it’s more flavorful. 😊 OMG now I’m craving them and it’s almost midnight. Lol

Your sweet channel with these wonderful easy recipes is so welcomed by me in this stage of life! I loved my life of homeschooling and homemaking but I was not the best at having a great cooking repertoire. My 20 year old son wants to learn to cook and we are going to cook the Bolognese and the oatmeal fudge bars tonight when he gets home from work. I've been reading about making sliced meats (like deli meat?) at home. I scored a meat slicer at goodwill for only a few bucks and would like to try making roast beef slices. We make our own roast beef! Salt pepper and garlic. Vastly superior!!! The key is cooking low and slow (we use the oven). We dry age the meat with salt for a day or two before cooking and do a good sear on the outside before cooking in the oven. Chill before slicing. You will never go back 😁

Plant red and yellow climbing sweet peas every 5 feet, they will attract the pollinators to your corn crop. Right now the pollinators are not coming to visit because the flowers are elsewhere. Put one on each side of the cattle panel arch where your butternut squash and green beans are for the same reason.

The fritters need to float in the oil. A cooking pot with 4 to 5 inces of oil or cheaper deep frier might be what you need. I say cheaper frier only because you said, you rarely deep fry and the inexpensive ones work just as well as the expensive ones do with less bells and whistles. Oil not deep enough is where your fritters went sideways. I used to make donuts and used to watch them make donuts at the donut shop near my school in the mornings. I learned a lot and asked questions, people like to explain things to those who are interested. Much love and many prayers. 💖💖

I had so many tomatoes this year, i dehydrated a bunch in slices, then sprinkled bagel seasoning on them, after they were done i put them in my grinder and made a seasoning , it was amazing. It was my first time dehydrating, now i dehydrate everything.

For your apple fritters .Try using your digital thermometer for oil temp . Also you can use your cookie scoop to drop your batter in the oil so they are more consistent in size . And I find they cook better in a deeper pot of oil . Some recipes I have seen they pre cooked their apples but I don't think that's necessary unless your using big chunks of apple. 🍎🧡

Hi,Becky. I agree with you that learning and mastering a new recipe, gardening technique, or animal raising challenge is very soul satisfying. You are learning to be more self sufficient each time. I am 71 years old and still enjoy the satisfaction of learning and achieving something new. I used to work in a Jewish bagel shop so I know a bit about making the things. I imagine it is a personal preference( you want the taste but not the food to fall through the hole) , but I would pull my bagel way out more when you are making the hole if you want that traditional bagel look. Make the hole atleast an inch / inch and a half across when you first formed the dough, otherwise the hole fills in as the dough rises. They did look yummy. I also am a late Comer to the Everything bagel seasoning. I'm going to try it on my Tomatoes now,too.

I've learnt how many things you didn't have to buy from your channel. I knew that breads and sauces and cinnamon rolls could be made at home but i thought it was so much more effort than what it is. Also taking the time to build the right flavour profiles before moving onto the next step has come from your channel. I loved cooking from when i moved out of home and started doing it for myself and my husband, trying new things. Now my husband manages the veggie garden and i experiment with tackling what he brings in. I don't can or preserve just freeze what we can't keep on top of (like green beans) and your enthusiasm is infectious when it comes to motivating me to try new things. This year you have planted the idea that i want to make my own gnocchi with the potatoes we have coming in in preparation for my maternity leave coming up, gnocchi and pomodoro sauce is one of my favourite simple meals.

I am not a professional bagel maker, though I make lot of bagels. Just a wife that a few months ago dove into the sourdough world and now make all our bread and bread products at home! I would absolutely suggest sourdough bagels. The chew is wonderful and its incredibly flavorful. If you'd like a sone starter, to start, I'd certainly be willing to give you some of mine! Its a fun journey so far. Loving it!

Love to learn new things too. Never knew that's how bagels were made. Excited about the potatoes and beans! On the frying thing...for the fritters you need a dutch oven pan with at least three inches of oil and use two tea spoons to drop the globs in with. One with the fritter batter, the other to scrape the first spoon. In between batches, make sure there aren't any little pieces of batter in the oil that burns..it will flavor the oil with a smoky flaver that isn't good for sweet things.Thank you fir showing us how to make cool things.

You are my favorite youtuber! Hands down! This isn't a recipe story but close enough... we had a pecan tree in our yard growing up. When I was 2 or 3, my dad picked up a pecan that fell to the ground and gave it to me. I got mad and said this isn't a pecan! They come in plastic bags from the store, not in a shell from a tree! My grandma use to work for a restaurant when she was younger. She loved to make doughnuts when she would come and visit. I have made her recipe several times when I was younger. It needs to be made again sometime soon. Mostly learned from her that Medium heat is the way to go. Don’t let the grease get to hot. Better to be a little low on heat than to be to hot. You can always cook them a little longer.

I made bagels a month ago - Meg at Hollar Homestead- they were totally awesome , I didn’t eat a lot of them so bought the occasional pack but I’ve stopped buying grocery store food so I made half the recipe and I’ll never eat store bought anything let alone bagels. Hi Becky. Bagels freeze beautifully. I slice mine in half and freeze them. When we want to eat bagels we pull them out, and through them in te toaster. Delicious.

I so enjoy watching your vidoes, Becky! Thank you for sharing your life with us. Regarding your fritters, I wonder if your oil should have been deeper? It looks from the video like your fritters are touching the bottom of the pan; I think you'll have better luck if they float a bit.

I was never a big fan of fritters. Then I tried cooking the apples to a soft stage , cooling then adding to the batter. It was great. The apples were soft and the fritters had a lovely crunch. We enjoy them when we want a simple sweet.

I made these bagels today. OMG!!! So easy and Soooooo yummy. Made a little chicken salad with some leftover chicken to make sandwiches with the bagels. Will absolutely make these again.

So far I have made 5 batches of the bagels and my family and friends love them. I have made onion, raisin cinnamon, chilli cheese and the plain ones. I’m loving learning along with you, turns out you can teach an old day g new tricks x

A quicker way to separate your beans is to press down and break all the pods while in a big bowl/container. Shake it and let the bean fall to the bottom and pick the bigger empty shells out. You can then sift or on a windy day toss the beans up and the shells will blow away. Will save you a bunch of time touching each pod to separate. Congrats on your garden production this year. Amazing

More oil in the pan for deep frying the fritters and/or doughnuts. They need to float in the oil and not touch the bottom of the pan. That way they are getting more cooking surface in the oil.

As a shower gift when I got married, one of my great Auntes gave me 3 recipe recipe card with the casserole pan she gave me. She gave me a raised donut, a buttermilk donut ( my great uncle's favorite ) and a buttermilk biscuit recipe ( to help use up a carton of buttermilk). For anyone who like the donut holes, like my family, role out the dough and use a pizza cutter to cut some squares to fry.

The batter for the fritter needs to rise/lighten before frying. 15-20 mins is good in a house environment. The apples will release some liquid so gentle fold after a rest...then gentle scoop into oil. Possible your baking powder was old by look of batter. Better results if you use more oil AND in that Dutch oven. However, a good wok solves a lot of problems with fritters and donuts. I would fry only 2-3 max at time. Wok allows you flip gently and let fritter or donut swim. Less oily product if you cook fewer because it's all about dropping the oil temp when adding product. You don't want to drop temp so fast. You will use minimal oil in frying if you don't drop the frying temp with too much product at same time.

So I just tried the exactsame fritter recipe. 1st two came out the same. I turned down to about 200°f and they cooked all the way through. They initially sink down but with a little push come right up to the top( I used veg oil as it was all I had. ) now I'm going to glaze these, and what an awesome treat.

When I've made bagels in the past, I've always rolled the dough out into a long bread stick style shape as if I was making gnocci's, then twist the dough into a bagel. Crimping the ends together to ensure a complete bagel.

Wow on the bagels! The last couple of winters I have been getting into more baking (I’m a senior and it’s just hubby and I hence not an avid baker, per se), however perhaps I will try this bagel recipe! I like the suggestion of bread flour vs all purpose flour for such things. They looked awesome. And congrats on your over 500K subscribers! I certainly can why you are so popular!

Doing the finer dice on your apples was smart for your fritters. Also, a lot of apple fritters actually get a glaze, simple powdered sugar and a splash of water or milk when theu are still warm, and it can drip off, at least that's how we buy them here in the Midwest. Definitely think thinner layer, lumpy dough, with even a couple of pockets in them. You can also brown them up just a little bit more, use a deeper oil, like in your dutch oven cast iron, so they can float and not be so much like a pancake. The lumpy texture when finished is a good thing, holding the glaze in certain areas. Congratulations on making your first amazing bagels! I remember that feeling of YES, I finally got it! And the kids loved them, which made it all the better ❤

I agree that a deeper pot with a little more oil would make using the candy thermometer easier and make the fritters fry a little better.

When you get the dough in the pan it has to be higher in the pan so they can cook. Nor a half inch but enough so they can get brown on the bottom without touching the bottom of the pan.

You have no idea how much you have helped me bread making! I e made dozens of loads of bread and they were awful!! You could throw them through a window. Tried all different recipes and all the same. I tried the French bread loaf and the No knees loaf and they were fluffy and delicious!!! I’ve never been more proud of myself! When I went home up north I had to show off to everyone I could finally make bread! Thank! And my fiancé thanks you too 🤭

I use my Cusinart air frying toaster for most things that are supposed to be fried. I have made apple fritters in them and they turned out evenly cooked.

Hi Becky. The bagels look delicious For frying : one way I learned is first of all you’ll need a little bit deeper pan. You will also need a pinch of flour. When you think the oil might be hot enough take a pinch of flour and place in the oil. If it sinks, the oil is not hot enough if it floats, the oil is hot enough. If your product seems to be getting too dark too fast, turn the heat down just a smidgen. If the oil is not hot enough, your food comes out greasy. If it’s too hot, the product is too brown and the inside is not done. You have to adjust your temperature sometimes till you get it right for your stove. It just takes time and you’ll learn to fry like a pro. . I’m not a pro, but I did learn to fry food. Don’t eat much fried foods anymore like I have in the past. Have a blessed day .

I'm from Minnesota and at our state fair we have a booth that sells corn fritters and they are amazing! They give out honey butter with them to dip the fritter in and that makes it even better

I make bagels too. I have enjoyed playing with different add ins. Our current favorite is with cheddar cheese and fermented jalapenos into the dough. Then to add a slice of cheddar cheese and a few extra fermented jalapenos on top during the last 3-4 minutes (this is so yummy with a BLTA or avocado toast). Also pumpkin and pumpkin spice with a few drops of cream cheese baked into the dough almost a swirl type thing... my children love that. As far as the holes, I stretch them a lot large just before I add them to the boiling water. I find that the close up a lot. Thanks for continuing to show all the things that you try. It always encourages me to keep trying too. I just loving trying things out and my family loves it too.

Becky great job! I’ve never made bagels, but now want too. I use to make apple fritters at the donut shop I worked at as a teenager. You need a lot more oil so they float and we used chop sticks to turn them. Otherwise they look great. Wow the black bean harvest was awesome! So much fun

Fantastic harvest of potatoes & black beans! Great looking bagels; I’ve only tried the sourdough bagel recipe & it was a bit heavy, but tasty. I think I’ll try this recipe! You can make your own bread flour by adding vital wheat gluten to all purpose flour. Those apple fritters look scrumptious! Thanks for sharing! Blessings to everyone 🤗💗🇨🇦
