HEY MEG! A bit of tomato advice.....put them in the pressure canner like you do the roaster and pressure for 5 mins at 10lbs. The water will separate to the top, you can pour it off and have just tomatoes left to make whatever with so you don't have to cook it down for HOURS....I know, I use my roaster for tomatoes too but it's so much faster pressuring them first! Fill it up to the top and smash them down! You'll thank me later 😉🤣

If you can score a freeze dryer, you can make tomato paste out of the skins and seeds that are left after milling. Just freeze dry the "waste" as is, and then after its dried, zip it in a spice grinder to get a powder that you can reconstitute to a paste whenever you need it. Stores in less space, too.

I have dehydrated the leftover skins and ground them to powder as well. I have learned that freeze drying preserves nutrients and flavor. Would be interesting to compare the two

Here we drive around town & find trees that have fruit falling & rotting on the ground😱. We get permission & I’ve slowly started prepping & my brain is COMPLETELY OVERWHELMED 😢 My son is here helping take care of me & has been helping with prepping. We have been processing our tomatoes lately. Huge difference in processing time relative to what I am seeing in the video. I strongly suggest (again) that you plant paste type tomatoes. Your tomatoes are mostly water. You will save on energy and time with better tomatoes. It takes us about 1.5 to 1.75 hours to boil our sauce down in a heavy bottom pot on the stove. Seriously. Game changer. Cute little porkers! Wish I had the space for one. If I recall correctly, another homesteader built a wall in the pig house where the piglets could go under it to get to another area, but the adults could not. This kept them from being crushed.

Ben, how sweet baby piggy's. Meg, I agree making tomato paste is a pain and easier just to buy. Although I do take my cherry tomatoes cook them down and use my immersion using the whole tomato and then reducing till thick then can it then add to my tomato sauce when needed. Never thought of using beef with bacon fat for sausages sounds good I'll have to try it. One reason I enjoy when you preserve or making dinner gives me another recipe outside of my box 😃. Ben, we used to do the same with our meat in the freezer especially if we had to butcher either a cow, pig, usually got two deer and about three wild turkeys and walleye from the lake nearby. Growing up as a child on the farm, I loved baby pigs so much! I couldn’t sleep late at all when there were baby pigs or baby calves on our farm! I also loved baby chicks! Your adorable little girl will have memories of these baby pigs, for sure! She really loves helping her mother in the kitchen, too! She’s an absolutely beautiful little blonde!

Meg money saving idea for you!! I avoid wasting tomatoes by adding tomato paste to my tomatoes or tomato juice in my roaster instead of cooking down and losing a lot of the tomatoes and juice. It’s amazing how much you save!

I totally agree on not making tomato paste. I'd rather have all the other things that can be made with tomatoes. I have that same food mill and I love it for tomatoes. Tip I learned, cleaning the cone with the tiny holes, is so much easier with a bottle brush. Buggy is so cute, and growing so fast.

I've learned to keep everything in my freezers in those re-usable grocery bags. I have several bags with chicken, several with goat meat, etc. Nothing goes into the freezer loose. It makes rotating older stuff forward much easier. Just lift out the older bag, put the bag of newer stuff in the bottom, and put the bag of older stuff back on top of the newer stuff.

Actually Meg....if you freeze dry or dehydrate all the leftover seeds and skin....after it's totally dried you can grind into a tomato powder that keeps quite well in jars. When you are ready to use...just add a bit of water and bam! You got tomato paste! And if you decide to try it make sure its layered pretty thin so it dries quicker😉

Make tomato paste by dehydrating the pulp/skins from the food mill and then powdering it. With that tomato powder, add just a touch of water to make thick tomato paste. You have the product already at your disposal, you will never have to buy tomato paste again.

If you have a dehydrator, you can slice your tomatoes layer them in your dehydrator till they are done, you can put them in a blender and make a powder out of them and when you are ready you can take some of the powder and add water to it. You can make a tomato paste out of it or tomato sauce

When I'm milling my tomatoes I have a muslin cloth on the pot that receives the seed and ski free tomato. This separates the juice from the pulp. I can the juice for my husband to drink and I use the pulp to can as a purée or cook and make my canned tomato products like ketchup, pasata, spaghetti sauce or tomato paste. I find the cooking time has been reduced dramatically by doing it this way. I also dehydrate, then grind the skin and seed mix to use as a tomato flavour enhancer.

Tomato paste won’t burn if you do it in the oven. I did it this year and it was wonderful. I made my sauce this way also. Roasted several deep pans of tomatoes with onions and garlic and little olive oil (single layer), when done you can carefully pour off the liquid (which I freeze dried and powdered). Then cool and put in a food processor to blend all the skins and any seeds. Jar up and can sauce. For paste spread on sheet pans and put back in oven to evaporate, I used 300 rather than 400 I used for roasting. Worked fantastic and could jar right up from the sheet pan.

I make those roasted potatoes in the oven also...but in the summer when I am grilling I use a grill mat (one can use tin foil instead)...and grill them on the grill...turn up the heat...cut the potatoes like you do...use a bit of olive oil and throw in a bit of garlic and herb with a bit of creole seasoning or red pepper flakes and stir...then pop those bad boys onto a hot grill...turning them ever 8=10 minutes...total of 40-45 minutes...they are SOO good.

This was my first year using that same mill and man, what a game changer for me. For me, it's a perfect size and the effort for my hands and arms was minimal. 50 pounds of tomatoes was less than an hour to mill. And then dehydrating the skins and peels, I ended up with a quart of powder, it was pretty perfect this year for me. Great job, y'all! And congrats on the new piggy babies ❤❤

You can make tomato paste by dehydrating the skins to reduce that waste and then grind to a power and add water. This was you don't reduce your yield of tomatoes for sauces and such.

I like to dehydrate tomato slices when I have more than I need. Then I turn it into tomato powder to add to sauces as a thickener instead of tomato paste.
