You had forgotten a big perfume history part, where are? The Arab chemist Al-Kindi (Alkindus) wrote the Book of the Chemistry of Perfume and Distillations in the 9th century and chemist Ibn Sina (also known as Avicenna) introduced the process of extracting oils from flowers by means of distillation.

What makes our nose differentiate smell is the olfactory nerve, which has million of fibers. Each fiber takes a specific smell or odor, that is send to our brain. That's why we can differentiate more than two smell/odor at a time.
