Add 2 smoke tubes to you pellet grill so you can get some smoke on the wings. One more thing, if you have done a lot low smoking and have any grease buildup be careful. I tried this about a year ago and my smoker caught on fire at about 375F. I just let it burn and after it burnt out I still used it. The next day I had some cleanup but it actually made it easy to scrape out the char leftovers. I did a couple of cooks using this method and they did turn out good, except I had better luck holding it at 425F the whole time. You can tell of difference with the smoke tubes also, you should give it a try just get them smoking well before you put the wings on so they at least have a chance to get a smoky flavor.

A lot of people suggest the smoke tube. I will have to try that out. I had the same issue with a fire before as well. I put foil over my deflector plate so I try and change it out before doing wings

Thanks for the note about how to keep them elevated from the deflector plate. I've tried going hot like this before and it nukes the wings. Great idea!

I see a lot of skepticism in the comments below. Here's what I will say about this video. I saw it Friday, made them on Sunday and these were the best wings I have made at home in a long time . I did use a smoke tube filled with pecan chips on my Traeger and I put wings on the upper rack when it reached 350. I admit I was concerned about taking the pellet smoker that high and since the unit was on my deck nearby the house I watched it closely. This was a great method.

Yes, use 2 smoke tubes only 20% full each. It doesn't take long enough for a full tube and 2 will double your smoke for a short cook. I do this all the time, even for plate ribs but I fill them both all the way since it is a really long cook.

I love this method. I cook them ever other week usually and have never had an issue with running the grill that hot. I still suggest watching though but its not bad cause its a short cook. you can have an issue with the fire burning back up into the hopper. I need to try the smoke tube out though that is something I haven't tried

i'm not convinced on the method, don't care for the 0-400 method either, but i am interested in the sauce, will try it out.

The best way is to crank the temperature up on smoker, put a skillet with oil, wait for oil to heat up and fry them on the smoker.

475°?..wouldn't it just be better to use the weber kettle?..I haven't cranked my smoker past 300° yet, anything higher than that and it's a automatic weber cook..

Your right. Then invest in a air fryer. It makes great warm up for left overs and crisp those wings that are cooked and you don’t want to leave it on a smoker to dry out.

The pellet smoker acts more like an oven then the kettle does. That being said I have not tried these on a kettle before. I treat my pellet smoker like an outdoor oven

if you want it crispier smoked...Cornflour .and for a better tajine sauce add garlic and skip the tajine

I have been watching a lot of wing videos and the best mix i have found is one teaspoon each of baking powder, cornstarch, and rice flower per pound of wings. It was also good with ap flour instead of rice before I bought some, but if you can find it's a little better. Also, after they cook for 20 min spray with pam on both sides when you flip them. This will make it even better, especially if your flour mixture is looking white/dry. It was from an oven fry method but it's all the better on the smoker with a couple of smoke tubes. The guys name is chef ange if you want to do a search and find him, check out the last garlic parm ones.

You're not smoking at 400-450. Smoking is sub 300f IMO.

Yeah I tend to agree, I think I have mentioned that cooking this hot doesnt really smoke, its such a hot fire burning there isnt much smoke at all. They are technically cooked on a "smoker" if you want to call a pellet grill a smoker.
