Can I brine Cornish hens like this
@samiam8302 ай бұрын
🛑 5:46 🛑 Pat it dry and place back in the fridge for 3 days!!!! Do not skip this step. It will dry the skin to the meat and make crispy skin!! High quality restaurants never skip this step. The skin will turn clear and the white fatty look will go away. Just pat dry, place in clean bowl, cover bowl with plastic wrap, refrigerate 72 hours, season like video said, and cook however you want. I promise this works so well! Great video!!! Love the brine

Brining is 100% the answer. I will never cook a turkey for thanksgiving that's not brined... and I cook a whole chicken or two a week at home... always brined. SOOOOO good!
@poohsplaylist4913 Жыл бұрын
I use Tumeric instead of Cinnamon Sticks. Gives it a beautiful golden color and the flavor is more comforting to me than the cinnamon. Absolutely agree on the Smoked Paprika - it's a must! Makes your oven-cooked bird taste like you kissed it on the grill. For my turkey, I use a 5 gallon bucket from one of the home improvement stores. I clean it out, rub it down with a little kosher salt to make sure it's dry, then use it to brine my turkey for Thanksgiving. It sits upright, so all the sides are covered, and the lid is air tight!

A couple of years ago I brined a turkey and smoked it. Some people I love asked me to do a turkey, so I found the best recipe I saw on the tubes. I don't even like turkey, I never have, it's always dry and bad and only as good as the gravy. I had no idea there were people out there that could make amazing, juicy, plump turkey with a nice crispy skin. I had simply never had turkey made by someone who knew how to make good turkey (sorry grandma, mom and both wives). I tried it with chicken, amazing!!! I tried it with Cornish game hens, amazing!!! Brine your poultry people. And the best way I've found to smoke a brined turkey is to spatchcock it and smoke it flat. I promise that once you brine turkey or chicken, you'll never go back to dry, bad bird. Nice video AB.

I only use about 1/4 cup of kosher salt, 1 lemon, 4 cloves of elephant garlic, cracked peppercorn medley, 4 bay leaves and 2 sprigs of either thyme or basil. Usually does it for my brines and my chicken gets great results after about 4-6 hours in the brine. I pull it when my chicken looks “bleached”. Works perfect EVERYTIME! (For me and my family of course). Definitely gonna have to try this. Sugar AND a cup of salt…I’m intrigued on what this flavor is gonna turn out to be.
