Brine ingredients 1/4 cup granulated sugar 1/4 cup kosher salt 1 teaspoon rice vinegar 1/2 cup warm water Mix together Place 5lbs of chicken in brine Fill bowl with cool water Cover bowl Sit overnight Flour mixture 2 cups flour 1/3 cup corn starch 1 tablespoon poultry seasoning 1 teaspoon no salt tony chacheres 1 teaspoon slap ya mama 1 teaspoon paprika 1 teaspoon black pepper 1 teaspoon onion powder 1 teaspoon garlic powder Adding seasoning directly on chicken oh 1/2 teaspoon salt 1/2 teaspoon black pepper 1/2 teaspoon cayenne Sprinkle hot sauce Fry

The first time I tried to fry chicken I was in my early 20s. The chicken was burnt on the outside and not cooked on the inside. So I never tried to fry chicken again. I am going to do this chicken again your way I will be 75 this year. You have encouraged me to try it! Thank you so much.

I made your chicken exactly how you said and your legacy will live on..I will never make chicken wings again without using your recipe. That has to be the prettiest fried chicken I have seen. I brin my chicken using salt and sugar but I never thought about adding vingar or using cornstarch in my batter flour. I am going to try your recipe the next time I fry chicken. Thank you for sharing your secret.

This video was so comforting. Food for the soul type comfort. Everything about this video is authentic. Her name, the natural imperfections of her speech, the seasonings she uses and omg the hot sauce, and the whole process for bringing which I've never done before but sure have learned something today. She is the grandma and mama I never had. The end result looks perfect no burned chicken. And I could not believe that people gave her a thumbs down. This video is not about being perfect it's about a southern African american heritage and generations of good cooks. I love it and to too it off she naturally thanks the Lord which shows me she has a genuine relationship with him. Nothing fake about this cook. I will never forget the impression Mae Mae has left in me in this one video. So glad I stumbled upon it. And the thumbs down people need to go some where.

I tried your recipe for chicken today, and OMG ! IT IS THE BEST ! I have NEVER ever 'Brine' my chicken over night before. The flavor and seasoning is Perfect, I NEVER ate chicken that taste this good. I will NOT be buying chicken out again, I WILL fry my own chicken using your instructions. Hello George Fields Jr. thanks for reaching out. I’m so glad my recipe could be a help to you. This is the way I learned yo fry chicken when I first started cooking. My mom always called it soaking. We lived in the country and raised our own chicken. Even after we left the country she still did it. I learned later that’s it’s called brining but again my mom called it soaking. Lol. I’ve tried many chicken recipes over the years but nothing has topped this old landmark way of doing it. Thanks for watching!

So sweet! This is a great method. My grandmother had a great technique. She would use ciold buttermilk as a brind. Season the chicken and refrigerate. Then coat the chicken in seasoned flour and place it in a brown paper bag and refrigerate again. Re dust lightly with more flour and deep fry in a cast iron dutch oven. The best chicken you ever tasted. Moist, juicy, flavorful, and tender. I miss her cooking. Thank you for sharing. Continued blessings and success.

My grandmother was a baker. I'm in my 70's so do the math. Sundays meant parker house rolls. You could smell her house all the way to church. I like to cook and will join this channel to share the techniques. Somebody will pick up the challenge after me.

Hey guys! I was so excited to share this secret for Southern fried chicken with y’all. Let me give you all a little history lesson on why I was excited to share this with y’all. As some of you may know I’ve been cooking for over 50 something years. My channel is about sharing old landmark style of cooking. Over the years if tried many recipes for “the best” Chicken. Most of them dealt with how you season and marinate the chicken. They just didn’t work for me. That’s why I went back to the way I was taught to fry chicken. Soaking it in salt and vinegar water (brine) and a small amount of seasoning on the chicken and the flour when you get ready to fry. If y’all want moist and tender chicken my experience is with brining the chicken. Then but your seasonings in the flour. If you give it a try let me know how it turns out. Also for those asking my fryer I got it from Walmart and it is by Emeril Lagassi. Love you guys and have a blessed day! 🥰🤗🙏🏽

I was raised in the Carolina's and Texas so southern culture is what I was raised with. Watching and listening to Mae Mae takes me back to my youth and some the happiest times of my life. For all the focus that is paid to the more troublesome aspects of history in the South, I say that Mae Mae simply shows how wholesome and comforting Southern culture can be and still is today! Mae Mae, I made this chicken for my family here in Colorado and it is now our favorite way to eat it! Thank you for sharing your love in this recipe and for taking us back to a simpler, happy time!

I love this lady! She reminds me so much of my granny. I remember my granny sounding just like her. She is from Arkansas and when she was baking her cakes she would yell at us kids to stop running before we make her cake fall. Being a kid I never understood what the meant until I got older lol.

I brine my chicken, that was the first thing I learned how to cook from my mama, and that is what she used to do, she is from the south. I too have tried other recipes I see to fry just not the same. however, the one thing I like using is after brining while the chicken is wet I like to use corn flour, toss and then put the seasoned flour on it and let it sit to coat chicken well. I agree that when you let it sit the flour sits well on the chicken and it comes out a beautiful golden flakey crunch ! thank you for sharing chicken looks delicious!

Dear Miss Mae, hello.! I am likely to be your oldest student. But I just love your space you have to cook in! My kitchen is so small.I am 98 hrs old and my Mum had 15 children, Mum never did soak Her chicken and her fried chicken was never great but we were hungry we are it. My husband told me to tell you thank you. He really enjoyed the whole chicken I brined last night. I did my brine with the kosher salt and lemon pepper. I didnt have any vinegar or sugar but I did it anyways. It tasted so good. Everyone give it a try. Thanks again Mama Mae!

I've brined turkey before. I've never thought of doing chicken. I've done it in a milk + vinegar and hot sauce bath, seasoned of course, for a few hours then fried it. I'll definitely give a straight brind a try! Chicken is a labor of love to do it right.

What a lovely plate of fried chicken! It reminds me of my great grandmother's. Hers looked just like that. If I make mine like you and it tastes like hers did, I might cry tears of joy. I have never brined before but will be trying it. When it comes to seasonings, I often times have every seasoning in my cupboard out😂. It's usually season salt, pepper, garlic powder or salt, onion powder, paprika, tony chacheres, yellow mustard and then the cornstarch and flour mix.

Have you ever had brined turkey? I tried it once 8 years ago and I can never go back to having turkey without brining so yummy. I brined it in apple juice, salt a water.

But by the time I was on my own and cooking she wasn't around to be able to learn from her. I even did in home health care and tried to learn as much as I could from the elders I cared for. I was watching you and like to see new fried chicken recipes...when I saw the FRANKS HOT SAUCE I became a subscriber. Your chicken looks amazing. I worked in a chicken place for 4 yrs. We had to put the chicken in vinegar n salt water before we breaded it n fried it. I guess it's what made the chicken sooo good It was the best chicken I ever ate......will start trying it.

I just did this recipe and here's my opinion....The Brine was🔥🔥🔥🔥. BUT, if you're used to the way your food normally tastes, STICK TO THE WAY YOU SEASON YOUR FOOD/MEAT. I'm sure i didn't get it EXACTLY like her, but, i don't normally season my chicken with onion or garlic. But, THANK YOU SO MUCH for the brine tip!!!!!!! Blessings ALWAYS

You did that! Yummy. Just like my Auntees would mix their coating!! They wold make a batter out of buttermilk and egg to dredge that chicken in before flouring. For the big pieces they would cut a slit in them too. Nothing like southern fried chicken! Great recipe.

Chef and More Hey sis! Brining is the secret to cooking the best fried chicken that's is the way I was taught to do it over 50 years ago, hands down.. believe me this knowledge comes from trying several other methods over the years , some was ok and the rest were a 👎🏾 that's is why I stay with this my old landmark style of frying chicken. Lol. You can get the same result of using a duche oven or a large heavy pot that can take high heat for deep frying. I don't use my electric deep fryer all the time and get very good results. I so glad to share this with you all sis , so y'all can cook delicious well season juicy chicken right in your own kitchen for family and friends. Thanks for watching and God bless 🙏🏿😍

Love this video, reminds me of my Mom and Grandmother frying chicken when I was a young boy in Memphis. They would spend all day in the kitchen cooking and talking and I think it was a way of getting away from us kids as we were not allowed in the kitchen when they were cooking. As far as what they used for a brine, I think they used buttermilk, what ever they did the chicken was always delicious. Thank you for taking the time to make these videos as I'm trying to find ways to recreate what the cooked when we were kids!
