2 Parts Coarse Black Pepper
1 Part Garlic Powder
1 Part Onion Powder
1 Part Paprika
1 Part Chili Powder
1 Part Dry Mustard
1 Part Brown Sugar
Tools I used in this video

Charcoal Chimney - amzn.to/2Feyk41
Stubbs Charcoal - amzn.to/2FUU6uQ
Harbor Meat Thermometer - amzn.to/2H3OY6Q

I used my Weber kettle for five YEARS before learning how many things I could do with it - snake method, minion method, grates with hinges, you name it. It's one of the most versatile, least expensive grilling and BBQ method on the planet.

Hasbashi, tiny but very effective. Just stuff it full of meats close it up and cook, never wash it. You wash it you loose the flavors. I use a weber like his by the way. Only mines not as clean as his is.

Kitchen Alpha if you'd like to smoke more, look into an Ugly Drum Smoker. You can build one yourself, or buy them. They're similar to a Pit Barrel Cooker, but larger, and more customizable. I've cooked 60 pounds of pork shoulder (6, ten pound bone in Boston butts) without issue. Best smoker I've ever used. Super simple. The Pit Barrel Cooker is also amazing, and I keep one at my cabin and can cook 8 racks of ribs and a few 10 pound shoulders on it. Thing is, the PBC is a hot and fast cooker, but make no mistake, it turns out Q as good as any other method I've used. Great video on the kettle and using it as a smoker for smaller cooks! I'm gonna share on Twitter as it's a great walkthrough!

I wanted to say thank you. I smoked my first thing yesterday. I flowed your recipe and instructions to a T and the folks at the BBQ couldn’t get enough of this bone in pork butt I smoked. I did stuggle with keeping the snake going a bit but it was easy to just move some coals and get the temp back up. Held at 250 for the whole cook and bone just popped out. Thanks so much. Your directions were great and easy to follow up to even checking internal temps. You taught me something that I find I will enjoy for years to come, and have a bag full of pecan to help me along the way. Respectfully, Shaun

Thanks very much for making his video. I bought a gas grill a couple of years ago and I had issues with regulating the temperature on it and never could figure out what was wrong with it. I also bought a very expensive electric smoker and had never smoked meat before. I smoked two briskets and both would not get up to temperature in the smoker until way too many hours of cooking. Like over 20 hrs. I think the temp guage may not be calibrated correctly not sure. Anyways I was looking on here for videos on how to use a charcoal grill as my dad never taught me. I ran across your video and low and behold I can buy a charcoal grill and use it as a smoker and a grill!!! And no more malfunctioning parts. Just a man and fire! Now I can learn and teach my son a start a new tradition to pass on. I can't tell you how great ful I am for KZbin. I can learn all the things my dad never taught me because he was never around. Thanks so much!

Thanks for posting this. I am grateful for your lesson on how to get the most out of a classic design. I followed it to the letter and our 9.32lb Boston butt came out perfectly at the 11.5 hour mark. I have had my 22" kettle for almost 2 years now and this was my first attempt at smoking anything. I had to follow the snake, rotating my hinged cooking grate after checking on it every 4 hours to add fuel and wood before it got too close to the end. I rotated my water pan too. The snake eventually burned 1.5 revolutions around my grill, but I started with each end of the snake nearly touching the outside corners of the pan. It took 8 hours to reach 160° and 3.5 more to reach 198°. Thanks again; you're a great teacher and very kind to share knowledge that you could easily sell.

Okay. Everybody is commenting on your accent. I'm gonna make an ass out of myself and try and pin it down. Somewhere in Western N.C. Swain County? While I'm here, let me ask a question. As the burning charcoal lights the unburned, doesn't it give off that coal smoke smell? I mean it is just anthracite dust and sawdust with a binder. Always wondered.

I had a Weber for years thinking you couldn’t use it for smoking until I saw this video. In fact, I’m smoking some ribs right now using this method. Happy Independence Day my fellow Americans and thank you so much for the video!

My first time doing a Pork Shoulder. Used the snake method. Used this exact dry rub mix on the shoulder and left in refrigerator over night, also I set up the snake the night before. In the morning at 06:30 I brought the pork out of the refrigerator an hour before cooking to let it warm up a bit. I got the snake going just as he says, put the tray of water in grill, set top grate on and put shoulder on. Grill came up to temp in about 20 minutes. At 4 hours it was at 163, I wrapped it and let it go until it reached 195. Let it rest for an hour as I had to take it to the In-Laws for a Father’s Day. THIS was the Best pork I’ve had in a Long time, and I’m in Chicago which means something! This was Soooo easy, no muss no fuss, let it do it’s thing. Thank You for the video!!! I actually just got another 9 pound shoulder going an hour ago :). Happy Fourth of July Everyone !
