there's an important step in realizing what it means, I can't descibe it here, but you should go ahead and watch ethan chlebowski's bbq video where he talks about tenderness developing after collagen develops. this is a weirder video though, I don't think he got what he wanted. None of us can watch his videos and ask questions as hes doing it, probably the main disconnect.

You don't only give an amazing recipe, you show people not to rely on recipes and take their own spin on it, and I think that's what home cooking is all about. And when you do something you talk about why you do it, which is amazing for beginners. And I love the idea of new people going into the kitchen, learning about cooking, everyone should learn to cook. For that, I gotta thank you man.

@@d.d.9636 I think this is where Carol's comment meant to go, but I did wonder in terms of how he looks and conveys himself if he was the inspiration for the hipster cook on the show Servant. There is some resemblance, and movie casting people do stuff like this....peruse popular folks on youtube as the basis for some character.

@@xXMiKuXx21 Not yet, just didn't have access to the chilis, and like you did not want to wait for them to arrive before making this.
