there's an important step in realizing what it means, I can't descibe it here, but you should go ahead and watch ethan chlebowski's bbq video where he talks about tenderness developing after collagen develops. this is a weirder video though, I don't think he got what he wanted. None of us can watch his videos and ask questions as hes doing it, probably the main disconnect.

You don't only give an amazing recipe, you show people not to rely on recipes and take their own spin on it, and I think that's what home cooking is all about. And when you do something you talk about why you do it, which is amazing for beginners. And I love the idea of new people going into the kitchen, learning about cooking, everyone should learn to cook. For that, I gotta thank you man.

If you can't get the Calabrian chilis, I've found that some chili garlic sauce from the Asian section at the supermarket mixed in with the mayo makes a good alternative!

Oh that's great to hear!! Did you try the recipe both ways then? I wanted to make this but didn't want to wait for the chilis to arrive, and use them only once!

@@xXMiKuXx21 Not yet, just didn't have access to the chilis, and like you did not want to wait for them to arrive before making this. The flavor profile is different, but like he said, it's about putting your own twist on things, and that substitution worked VERY well. I even lucked out and found that they sell Duke's mayo in my local store.

You have a cast iron "chicken fryer." It's been around forever. Whenever frying chicken, it is the utensil to use. Normally, it would have a lid. It is a 10" deep skillet and it is essential in a kitchen. I have two and they get used a lot. Keep it in great shape and use it with love.
