I did a chinese/japanese themed dinner after Xmas & this was the main dish. It was the first time trying to make & it turned out well, except I used a little too much of the chilli oil lol! I didn't think it would be as hot like the hot pepper sauce like from Antigua & the caribbean in general. Loved it! I made 4 dishes, including a fried rice, oyster mushrooms, & a miso soup for the appetizer fused with some chinese elements to the dish. My brother and wife who aren't vegan like mem enjoyed all the the dishes. Yah, need to watch the pepper. I will be trying to make your chilli oil & will let you know how it turns out. These are my favorite noodles. I love them in Pad See Ew and other dishes. But my local asian grocery stores don't carry them. I tried making them one using rice flour and it was a disaster (too thick). I'd love on video on how to make your own noodles!

I worked in China for 3 months earlier this year. I had a wonderful tofu dish called Chenyedofu. Is there any chance you could make that? I loved it and miss it. I had such fabulous food there.
