Awesome explanation as always! Thank you! Do you think putting a [ə] before the consonant instead of just making it syllabic would be inaccurate in those cases? Or would that change the pronunciation?

I personally don't ever use a syllabic R in American English, but doing a bit of reading, some people do. There are people who would transcribe the sound in the second syllable of "letter" as a syllabic R, I would transcribe it as a schwa plus rhoticity, like this: [ˈlɛ.ɾə˞]. I hope this helps!
