started cooking meat as a college student 6 years ago from Costco. This guys is sharing is a lot of what I discovered is the best part of a Costco membership. The Costco to grill/oven/pan pipeline is real and the best way to afford tons of the top tier bbq all the time

Dang, some of the meat prices were good but some high. HEB and Kroger beat the brisket and pork rib prices. Either way, very good explanation. Texas style BBQ really isn’t hard, just time consuming.

Correct, I go back and forth on Costco, heb, and Kroger. I've bought choice briskets at Kroger and costco for around 3.49 a pound that are marbled and better looking than prime at heb. Choice Tri-tip at costco were 2 fit the price of one at heb, and again were visibly prime grade. I'm going to slightly disagree on the easy part. Having the right heat to render the fat, and taking good care of the bark is a good challenge for most home bbqers I know. A quality offset, tending a fire, knowing meat tenderness, doneness, and getting the salt right is challenging but part of the journey. Correctly trimming too

@@sstanforddpt maybe I don’t get worked up as easy when it comes to food. I find trimming brisket relatively easy. Salt and pepper is hard to overdo, but easy to underdo on brisket. It’s a big cut of meat and can handle a lot of seasoning. I smoke unwrapped at 215-235 till the bark is where I want it (color) then wrap and bump the heat up to 250ish and let it rock until it’s in the 198-203 range. Then I start checking tenderness. When it jiggles like a plate of jello, I throw it in a cooler and let it rest till it’s down to 140, which is usually about 3-4 hours.

The prices are misleading. a $40/lb brisket from a bbq place is the post cooked weight. You're generally looking at 50% yield, so 2lbs raw is 1lb smoked. Add in the fuel costs and labor costs (16 hours to smoke a brisket) and it's not outrageous that a bbq spot would charge $40/lb for brisket

@@iBMcFly not really. Given how much trimming most places do it's either 50 or a bit less from raw weight (what they pay) to cooked weight. They don't cook untrimmed briskets

If you really want to save money, buy half a cow or a whole cow and use a chest freezer. Ground beef prices for steak and brisket. Big investment once a year or so, but you save money all year.

I only started BBQing like 7-8 months ago. I have done a brisket a few times and slowly I am getting better. Beef ribs are much easier. And pulled pork is the easiest. I wish Costco carried bone in pork. Besides the bone in pork, I buy almost all other things at Costco, quality is good and can't beat the price. They also carry american wagyu briskets. All I need is 12-14 hrs of my time and the whole family can enjoy the good food at home.

Yeah I agree I wish they sold bone in pork butts as well - I asked the person at my local Costco why and he said he wasn’t sure it was just how they do things. Maybe they will bring them in someday.

Math not quite there. Yes brisket about $4/5 lb. But after fat and cooking you get 50% so really $8/10 lb. Plus cost charcoal, wood…. But thanks for video.

The reason BBQ places charge what they charge is because of the labor. But by all means if everyone has 12-14hrs to cook a brisket or at least 24hrs to cook an entire bbq platter do it

$40? Blatant misinformations, I guess. I went to 7 bbq in the past 2 weeks, Franklin was 34/lb, Killen was 32, others were less. You lose like 25% of weight from cooking and some more from trimming. Of course everything is cheaper at home, but how many people are going to want to cook and rest the meat a day ahead. And if you don't do that then you're not getting franklin quality bbq.

More like 50% loss from just cooking as others have states. Maybe 15-20% more from trimming, most Texas places seem to trim pretty aggressively. Of course they use the trimmings for sausage, but still...
