A well-cooked pork hock can make a perfectly satisfying meal when served with plain rice. The pork hock was deep fried then soaked in cold water for 24 hours to make it more tender, then steamed for 3 hours with aromatic spices. Tender, rich, and comforting, its flavor is unbeatable. Although we used pork hock (knuckle) in this video, you can always substitute it with pork belly, which works wonders as well.

Many comments here complained about this dish not being crispy. Well, it isn't meant to be crispy. The frying process is for the texture of the skin (I believe). I tried this dish before (or something similar). Believe me, the texture is awesome. The skin is fluffy and melts in your mouth. Very tasty.

IMO westerners really can't comprehend the concept of gelatinous, gummy meat. They believe meat has to be crispy or caramelized / not cooked for too long and should not be boiled. Asians on the other hand really like the jelly-like texture of pork / chicken skins / feet / beef tendon.

Im v surprised that this method needs deep frying then steaming . It’s the best type of braised pork knuckle .. I think it’s the frying / soaking in water then steaming for hrs gives the tremendous mouth watering result . Well done chef .. I must try it even its 3 steps …. HK chef can do this vvv well n delicious even with pork belly . 🙏🙌👍

I thought the picture of the fried leg on a plate was really impressive. Wouldn't you want to at least try a little bit of that skin? It's already more than cooked! Then the chef says: "What's your hurry? It's only sixteen more hours 'till it's done"! I'd like to do this, but don't really have the fryer capacity. Might be worth a little improvisation, I bet this dish doesn't spoil easily, I could be eating it for days! Very nice video, too.

I am Chinese, I don't need to wait for 24 hours, as long as the temperature of the meat drops. And when steaming, you can use a pressure cooker, which takes half an hour instead of three hours. You can try to do it as I said, and there is basically no difference in the taste of the food in the video. You have to know that many restaurants in China have this dish. If it is so slow, the restaurant will go bankrupt.

Depends on your cooking tendency. We have oil at the ready almost always. As far as time, its not unusual to prep food a day before....just do it while hour cooking dinner the day prior. Youre in there anyhow. The actual labor is quite minimal.

This dish takes over a day to prepare, along with being cooked three different times, over the course of that (unfortunate) day. Personally, I'd stop after the deep-frying, but I admire the whole process.

So why soak it in water after deep frying the hock? The answer is to create a spongy texture and more surface area to hold more sauce. It is just like a cut of a very thick steak, you need to heavily season it, coz the salt does not penetrate the meat in a short period of time.

I cooked something like this once, a shortcut version that was just braised. It still took all day, and was worth it.... Now I see the "full" method, it's not impossible. I should do this at least once!
