It was an "expected unexpected" gag, where you know there's a bait and switch coming but you don't know what it is. It starts with setup, reinforcement of the setup, which creates a doubt in the validity of the setup. Then the subsequent payoff is delayed and in this case topped off with a subversion of expectation with it ending up being an ad.

Tom Collins with Hammonds Gin, pellagrino, agave syrup, split (as app for andy and partial(?) entree for conan) shredded beef layered pasta entree with spring veggies along with a side of roasted beets with half the cream and double the watercrest out first followed by albacore without red pepper and light confit on the side, roasted duck with black bean sauce and smoked onions for Andy with the creamed broccoli coming out midcourse, Salmon with parm and veggies for Conan, then Conan changed his drink from pellagrino with lime to a cocktail made with 3/4 in fresh ginger juice with T sugar, 3/4 oz lemon juice, 3 oz Hendricks gin stirred in ice with lemon peel expressed. ... They mostly complicated it by reading all the ingredients of the dishes. With an abbreviated mental list, I could remember most of it. Going to go make that cocktail recipe now, thank Conan

Even in their old show (Late Night) they would reuse bits that people liked or they wanted to try again. I’ve found that Conan is one of the new late night shows that actually has comedy bits and sketches, and sometimes they redo them.

I worked more than a decade on restaurants and obviously this is excessive but a way to remember is that menus have numbers and we don't have to remember the whole thing just the number and whatever modifications.
