The Waltons - in the kitchen with Judy Norton (Mary Ellen) as she makes Olivia's Applesauce Cake with Jane's Whisky frosting. A little "recipe" in the "recipe".
Here is the recipe we are following:
Olivia's Applesauce Cake
1 cup butter 3 ½ cups flour (sifted)
1 cup sugar 2 eggs
2 cups applesauce 1 teaspoon cinnamon
2 cups light raisins 2 teaspoons cloves
1 cup chopped walnuts 2 teaspoons nutmeg
1 teaspoon baking soda Pinch of salt
Sift together: Flout, baking soda, salt, cinnamon, cloves and nutmeg. Take ½ cup of flour mixture and stir into the nuts and raisins. Set both aside. Cream butter until whipped soft. Add sugar a little at a time until mixture is smooth. Beat in eggs vigorously. Alternately stir in flour mixture and applesauce. When all mixed together add nuts and raisins and mix well. Pour batter into a well-greased cake mold. Bake in preheated over at 350 degrees for one hour. Cool ten minutes, then turn out on cake rack. Frost with Whiskey Frosting when cake is cool.
Jane's Whiskey Frosting
¼ cup butter 2 cups powdered sugar
1 tablespoon cream 2 tablespoons whiskey (bourbon)
Pinch of salt
Cream butter, add sugar and salt, then cream and whiskey. Whip until smooth. Frost cake. Decorate with a sprig of holly.

One of my favourite episode is S2 E7: The Prize. Olivia made "Aunt Polly's" cake, later Grandma let Olivia in on the secret that "Cousin Polly had whiskey in her icing, rye whiskey" which Olivia and Grandma found in the sock draw of Zeb. It was decorated with fresh raspberries.

I remember with a chuckle when Grandma was showing Erin how to bake a cake in the kitchen and Grandma reveled the "secret" to Erin. Erin shouted "GRANDMA"!!!! Here’s a recipe you may like to make. Black Russian cake - copy 1 box yellow cake mix 1/2 cup sugar 3-4 eggs 1 cup oil 6 oz box instant choc pudding 3/4 cup water 1/4 cup Kaluha 1/4 cup vodka Preheat oven to 350. Grease and flour a 10 inch bunt cake pan. Set aside. Mix all ingredients in a large mixing bowl on low speed for 1 minute. Beat at medium speed for 4 minutes. Pour into pan and bake 45-70 minutes or until cake tester inserted in center comes out clean. Note: with 4 eggs in batter , the cake rises so it may burn. Watch carefully and cover with foil towards end of baking if it seems top is getting too brown. Cool 10 minutes in pan, pierce and glaze. Glaze 1/3 cup powdered sugar 1/3 cup kahlua In a small saucepan cook the sugar and kahlua long enough to melt sugar and cook out alcohol. Pour over warm cake. The original recipe called for glaze: 1/2 cup powdered sugar 1/4 cup kahlua Bake the cake for about 40-60 minutes. Keep an eye on it around 40 minutes to see if it’s done yet.

* You can use vanilla pudding for a White Russian version. Sometimes I’d use chocolate cake mix with the chocolate pudding. Funny story: a friend of mine is a church going woman and never had alcohol. She had a slice of the cake and thought she was drunk. It was so funny watching her reactions. She didn’t realize that the alcohol baked/cooked out.

This one brought back some good memories; I grew up in the mountains of southwest Virginia, and I can remember a bit of competitiveness around applesauce and fresh apple cake recipes/results. My own grandmother took real pride in her applesauce cakes and they were a holiday tradition for us and her neighbors - she started baking multiple cakes in October for the holidays and keep them in a deep freezer until a few days before needed. She always said that black walnuts (gathered, hulled, and shelled by my grandad) were the secret to a great cake.

It was fun watching you prepare Olivia's Applesauce Cake. I have always wondered about its recipe and how good it tastes. Maybe someday I will try making it, too. I bake an Applesauce Cake for every Christmas, but I use a recipe from the early 80s that's in my Betty Crocker cookbook. It doesn't require separate bowls or sifting or any of the extra steps so many cake recipes call for. All of the ingredients are put into a bowl and a mixer is used to mix it together. I don't frost the cake, but instead just sift some confectioner's sugar over the top once it's cooled. Thank you so much for sharing this enjoyable video. I loved it.

Watching "The Homecoming" was a Christmas tradition in my house growing up. When I was in my early teens I decided to make an applesauce cake one holiday season. It's such a delicious, old-timey, cozy treat that it became a tradition in our family and was a particular favorite of my late mother. My sister asked me a few years ago how applesauce cake became a tradition in our family, as I presented the annual applesauce cake at a holiday gathering, and I relayed the story that it was a tradition we had adopted from the Walton's. Even though I am a recovering alcoholic, a little bourbon still finds it's way into the recipe because it's the "secret ingredient" and the cake doesn't taste as good without it. Loved this cooking segment, Judy. I hope you will do more. Maybe the strawberry preserves from the county fair episode? LOL.

This was so fun!☺️Your kitchen is chic! I baked JB's Applesauce cake when my children were young. I used a Bundt pan and colored the frosting green with some holly leaf decorations for Christmas. I also added a ton more cinnamon and a little less nutmeg! (Afterall, Grandma said "there was too much nutmeg for her taste"😄) I think never in cinematic history has a food item had such celebrity (except maybe the tossed spaghetti in The Odd Couple and Lucy's chocolates!) I used Rum! Yum! Definitely would enjoy more cooking episodes, Judy. I like how you stirred everything by hand! Depression Era homes would most likely not have had a KitchenAid. Forget lifting weights at the gym; bake without a mixer! I have two Depression-Era cookbooks and sugar and meat are hardly ever mentioned! This was just lovely! You are so thoughtful,Judy/MaryEllen. I loved in the Homecoming when Mary Ellen balked at helping with the applesauce cake. Then later, after Daddy had returned, Olivia says she'll make some coffee. This soft, sweet voice pipes in from MaryEllen, "I'll help you, Mama!" Lovely everything! Bless you! 🧡💐
