Anyone else notice Miah skulking in the background during the last minute? 😂 The egg muffins look delicious! Definitely need to try with the heavy cream! Any time I’ve tried to make them they turn out rubbery. I’ve tried them with coconut cream/milk too. I’ve also heard that blending the eggs with cottage cheese is good too!

I make egg bites all the time! I use silicone muffin top pans; they're thinner but larger around; and they fit perfectly on biscuits or English muffins. A few favorites are: pepperoni, parmesean, and black olive; ham, Swiss, and broccoli; bacon, swiss, and mushroom; and chicken, ham, and swiss. I bake 3 dozen at a time, freeze, pop out of the pans, and keep frozen in bags. A few minutes in the air fryer or microwave while toasting an english muffin and I have breakfast to go.

I love making these for my family. I use thin bacon to line my cups and we like onions and tomatoes in them as well. The thinner the bacon the better to make sure they are cooked. The bacon seasons the mixture! Really good on a cold morning as well and Keto friendly. 🥰

I love the way you cook. It’s similar to how I do. It’s nice to see someone who isn’t so specific with measures. The other thing I always say is I cook by feel. When I stir or mix something it feels a particular way after 30 years of cooking you develop your own methods. These look delicious! Thanks for sharing. ❤

i make these for my own meal prep - use cottage cheese, eggs and seasonings and cheese, then sprinkle either bacon or sausage over the top....high protein, low cal - wonderful easy to heat and eat. :). Thanks Jess!

Thanks for sharing, Jess! This is a great idea and I will use it often! I have some of the silicone cups and they are great! I also use them when my Hens are laying well and need to save eggs. I crack them into the cup and freeze, then pop them out and into a container and back into the freezer :)

I make these all the time! They’re so easy and taste delicious. I usually throw in whatever I have but I ALWAYS add cowboy candy (candied jalapeños) since it’s my favorite topping. Fresh spinach is also a favorite.

Made something similar a couple weeks ago. I used cottage cheese instead of Feta Cheese and there was no meat, I used spinach and swiss chard from the garden. I didn't go around to each cup though. I pre-mixed the whole thing at once and then ladled in. Also, I use a silicon muffin pan instead of individual cups.

I love this recipe. My grandson and his girlfriend live with my husband and I and they are raising a few chickens. I told them as long as they take good care of them(-22) cause this Grammy doesn’t like cold either. Those look so good think that’s on for the weekend!!

Love these little egg cups. I have always mixed the filling into the big bowl, but like this method better so you get more even distribution. Wondering about your thoughts on silicone bakeware? I have seen research showing that most silicone bake ware has hormone disruptors and gives off some toxins when heated. Not as mush as plastic, but still an issue. I was surprised to see you baking with them. Would love to know your thoughts on this! Thanks.

I feel ya on not doing well with the cold. Normally I don't have an issue but loosing 80lbs has changed that I'm am WIMPY about the cold now! I need to try doing these again I wasn't a huge fan the last time I tried making them and they didn't seem to reheat to well.. I'm guessing I over cooked them to begin with

Question with those silicone liners... I had a silicone liner of a diff type that I ended up having to mark and keep split groups of because the savory kind of stained with a savory vibe that you could taste/smell when reusing for sweet things. Any issues with this on your end?

Be sure not to heat any silicone bakeware past 428°f or it will start to leak forever chemicals into your food, especially if you reuse them often. 😢
