That looks delicious ~ pro tip when wanting garlic super-finely minced: instead of adding your salt to the recipe; peel and mince the garlic, sprinkle the salt on and then use your flat knife blade to mash mash mash, gather back up, mash again a couple times. Scrape it up and put into your bowl.

I love cucumbers on my sandwiches and I like to make a veggie sandwich with other herbs and veggies, such as basil pesto, onion, tomato, avocado, pepper jack cheese and baby spinach and a touch of mayo (all organic ingredients) served on a seven grain bread (crust on) With this cucumber and cream cheese tea sandwich, "while it looks great", I would prefer to serve it on a sourdough crostini and that way you get the crunch from the bread as well as the cucumber 😊

Looks tasty but not how cucumber sandwiches are made in the UK. Sandwiches normally were made with brown bread, butter & peeled cucumber + little salt. Cut into lengths with all crusts cut off. My mother was a cook/housekeeper to a family who had a large estate in the south of England. They also had a butler + quite a number of other staff. Afternoon tea was served at 4 o’clock precisely. 😊

With the proliferation of additional foreign foods and spices into almost everyone's diets, the way things were served as little as 50 years ago, no longer satisfies many contemporary palates. My Mom is German. We grew up eating her slaw which is extremely more nutritious than classic American Cole Slaw which tends to have enormous equal amounts of mayo and sugar. Mom used cabbage, S&P, pinch of sugar, finely chopped yellow or white onion, plain white vinegar and vegetable oil. My mother typically becomes more than a bit irate when I mess with her recipes. About 10 years ago, a new Greek restaurant opened and makes the identical slaw, only with green onions, olive oil and wine vinegar. I now use green onions, grape seed oil and rice vinegar and my Mom loves it - never has once complained that I'm not making it "the right way". Taste buds are "more educated" today.

Here are 2 suggestions finger sandwiches: When using unsliced bread, instead of cutting the loaf of bread vertically into individual slices as you show here, cut the bread into 4 horizontal, long slices after you trimmed the crust off. Then make the sandwiches and then cut the long sheets into individual sandwiches. It's also quicker and easier to make 2 long sheets than individual sandwiches. I think it might also yield more individual sandwiches. Also, when making cucumber sandwiches use a vegetable slicer or mandolin to long thin slices going the length of the long horizontal slices. Again, it's quicker than making individual sandwiches.

Donna…I’m also for simplifying anything…I was also thinking about how easy it would be to make the length of the bread and then cut into smaller pieces…although I’ve never made anything like this. I would definitely use a veggie slicer.

I also love cream cheese. This is a deviation from tea sandwiches, but wanted to share. My Dad would make us snacks using Ritz crackers with cream cheese & a green pimento olive cut in half on the top. Simple, quick & delicious. I still make them today using table water cracker w cream cheese/olives or cream cheese/blueberry preserves. Yum!!

make it easier to garnish with a cucumber lacy by running your potato peeler the length of the cucumber luv and then its nice and thin to ruffle on top of the sandwich. I don't even use a toothpick I use a dob of the cream cheese to hold the ruffle together :))

Very nice, but I’m the sort who believes raw garlic overpowers every uncooked dish it’s in, so personally I’d substitute fresh dill, basil or parsley and chopped chives instead of onion powder.

Try waiting until the end to trim the crusts off. Look at the bread like a canvas, crust as the frame, and allow working off it. Keep juicier parts, especially tomato, from direct contact with bread so not soggy. Stack. Compress. Trim off crusts. Try toasted and mustard rather than mayo.

Just curious, what type of bread is that at 00:15? To my understanding all bread is "bakery bread" since it all comes from a bakery. Something like "brioche" or "milk bread" are types of bread, but I have never heard of "bakery bread" from anyone who instructs cooking for a living.
