this is such a wonderful salad - one of my favorites - so you ever add zucchini to yours? - I had it the other day with both cucumber and zucchini - I love how these veggies absorb the flavor of the dressing - yum

I’ve never tried adding zucchini but I’ve had raw zucchini in salad before at a restaurant and LOVED it. It had pesto farro to add bulk, so good! I’ll def try that next time!

I loveee pico de Gallo! I’m assuming this would be what they’re talking about, but sometimes we do it with just tomatoes and onions as well, but the same dressing. It’s eaten quite often for breakfast/brunch!
