Just made these for the family the other night. HUGE hit. The aioli was a delicious step up from plain old sour cream, even my 6yo enjoyed it. I doubt I'll ever be able to serve regular baked potatoes to them again! Thanks for sharing this easy to follow video of a delicious recipe.

Chopsticks! They'll tuck under the potato better when slicing. Love the crosscut idea and will try it. Maybe not the whole dish, but selectively, especially the hot butter bath.

I'm finding out that cast iron cooking is great for mouth and throat radiation damage victims! Food so tender it slides down destroyed throats! I have modified a few of your recipes so I can enjoy them! This one I can smell but the bacon I have to just look at and remember unless tender. maybe sausage or pulled pork!

I will try more of your recipes, my only complaint with this one was I needed to give it 20 more minutes in the oven. Honestly it was probably because I have a old crappy oven. Simple steps like rubbing on softened butter are obvious, but I'd never considered using them on potatoes. It's so crazy it just might work -- and as your results show, it does. :) Definitely trying this in my kitchen! Also, that is one fantastic looking knife!

One thing that I started doing since I filmed this video is to add granulated garlic and onion, Hungarian paprika, and red pepper flakes. In the last five minutes of cooking, I added some Parmesan cheese. That was VERY good. That vintage Case XX knife is one that Todd Sappenfield restored for me.

Suggestions: I used leftover grease from breakfast sausage and bacon to drench the cut potatoes before smearing with butter. Left a considerable amount of grease in the pan to help fry the bottoms. At halfway the first bake, added more butter to tips to keep moist. At end of 45 minutes, drenched again with left over grease/butter. When done, the potatoes were extremely delicate and required care to move from pan to plate. Drenched again...

Until I saw your approach to making Hasselback potatoes, I had never heard of this dish. I have since watched many other versions, but yours is the best one yet--every ingredient is something I love to eat and the presentation is over the top. I even ordered the same cast iron serving dishes which you use. I just have one observation/question. After spending about an hour in the oven, doesn't the flat cut side of the potato develop a crust not unlike armourplate? I was thinking that roasting the the potatoes on a sheet pan fitted with a raised wire rack might prevent that. Your advice would be most welcome. Thanks.

I am making these now. Just one more basting of butter to go! I have you know I've been looking at this video for weeks. Yet I still have to view the video while making this dish to make sure I'm not leaving out a step. I was going to add some horseradish sauce to the aioli instead of the mayonnaise, but I forgot to check that I still had some. I use that horseradish sauce a lot. Would have been very scrumptious with this meal. I also have a fresh loaf of bread, still warm from baking it early this afternoon. I got my new Lodge dutch oven last week to make the Ultimate Macaroni and Cheese dish next. Each night this week I've been seasoning my cast iron because it is too hot to do during the day. You have no idea how much I am looking forward to that one. I also plan to make many of your other recipes. Gotta go now to finish up my potatoes for my scrumptious meal. Thanks!

I made these the other day and they turned out great. I loved to tip on how to cut them. But one question i have is i made the white sauce and i wondered how long will that stay good in the fridge? I have it in a squeeze bottle like you used.
