Seems like male chefs tend to get to the point while female chefs have to tell stories before they can start cooking. Not all are that way, but that seems to be the general trend.

My son has hypoglycemia; his blood sugar dropped to 30 when he was diagnosed and threatened with a hospital stay. So, he truly does have to watch his diet. He found that if he cut way back on his sugar intake that he just felt better. Consequently, I no longer bake the sugar laden desserts anymore because my son just can't have them. I am definitely going to make one batch of these up just for fun. Then if he likes them, I'll make some more during the fall and winter holidays. Thanks for posting this.

@@katherinewagoner741 I use Cary's Sugar-Free Maple Syrup, have for many years, and love it. It's sugar-free, initially developed for diabetics, not true "maple syrup" but does have some natural maple flavor. No, I'm not saying I substituted refined sugar with syrup, I substituted some of the cream (liquid) because I didn't want to play too much with the liquid ratio in the recipe. That being said, it was lovely with only a tablespoon but sure, I guess you could use more. Or maybe use maple extract in place of the vanilla extract. Also this recipe has no refined sugar, it has erythritol (Swerve) and I would definitely use less Swerve next time.

These look great Joe! I believe I'm going to try this recipe with half white and half Brown Swerve, with some almonds added, and a tiny bit of caramel flavor!....Peace! 🎼❤☮

Joe I think you may have got the measurement of the heavy cream wrong, 4oz is roughly 125mls not 8oz as you say in your video. Learnt the hard way on that one 😁😁😁

I like your videos, two things tho, when pre-heating the oven could you also tell how much it's in Celsius? And maybe use some cleaner sweeteners other than branded products?

Can you explain why you add the last chunk of butter Way later with the vanilla and not in the beginning?

I'd make these right now but I've eaten half the bag of pecans. 😄 I'll buy more tomorrow. This will keep me from buying those honey roasted nuts I've been craving.

If they are purely honey and not added refined crappy sugar then the honeyed nuts are better than these powdered sugar things.

Those look yummy. Thank you. You could even drizzle on chocolate or dip in chocolate but of course it would increase the carb count.

I made these. These are excellent but I found them super sweet and I am a sugar addict (though my tastebuds might (hopefully) be changing as I try to kick sugar to the curb.) Next time I will cut it to 2 tablespoons and brown the butter as others have suggested. Update: I made them with the browned butter and half the Swerve and they were so much better (for my tastes.).

I roast almonds on the frying pan on a low fire while shuffling them a bit until they get a brown color and I then let them cool down and dry up. I skip the oven at 400c which would heat up my house and my bill like crazy.

Hi Joe Happy New Year🎉 Do you have a recipe for penuche fudge? I love your recipes and seeing your three fudge recipes has me wondering how to do a keto version of penuche fudge, which is my favorite (back in the day) Thanks

Mine turned out too soft. I see from other recipes it can be important to heat until mixture hits 236 degrees F so it will be hard enough when it cools. Trying that next time. Delicious, though. Thanks, Joe!
