Love your style, Dave! If I ate 50 carbs a day I'd be a Blimp!!😆 20 or less is the usual, but I'm sure others have told you Erythritol is a "sugar alcohol" and doesn't count!👏 Also, we subtract the fiber from the total carbs, so, even more good news!

If you not a fan of cottage cheese .. ricotta cheese .. as a substitute.. I like ricotta for sweet recipes and cottage cheese for savory and I also like to blend cream cheese with Ricotta cheese .. just a suggestion.. these look good I would only use ricotta cheese ❤️❤️😀

Dave I use to work at a specialty cheesecake store. We made them fresh in house & a family secret recipe 😋 we made bites, cakes & bars. Our bars were frozen slices of the cheesecake w/ a popsicle stick to hold it & dipped. Dip it in chocolate, cake crumbles, sprinkles crumbled cookies etc. It's not a healthy snack but OMG so good especially on hot days

Bravo for reading the recipe first! Please, please do not change anything. I am a pro cook, and I love watching your show. It is fun, creative and errors are made and usually fixed right away. The only thing I would suggest is the wash your new appliance toys before preparing food with them, and use soapy water. I was cringing so hard watching you make waffles on your new filthy waffle iron :)

The Truvia stevia leaf sweetener is great! My husband and I are both Keto, he is also Type 1 diabetic, that is what he uses in his coffee and NO problems with his blood sugar.

For cleaning the Ninja: put hot soap water in the bowl (pretty full) and then turn it on. You’ll still need to wipe down the electric part but it will get the big stuff off

I drizzle a little bit of honey on cottage cheese along with berries. Very good. My kids would never eat fruit on cottage cheese no matter what. Some chopped walnuts would be good, too.

Oh Dave - I understand not having all the ingredients in your kitchen, but you can't not use an important ingredient. The berry dessert needed the Chia seeds. When put in the fridge, the seeds will expand and suck the moisture out of the cottage cheese making it a more pudding like dessert. We make various chia seed puddings for a family member who has many food allergies. But, you are delightful to watch because yes, you are the 'every man's cook' - sort of winging it, not doing it 'right' but loving the process!

Because erythritol is a sugar alcohol, it can be subtracted from total carbohydrates when calculating net carbs. Net carbs are the carbohydrates that are fully digested by the body. For example, a teaspoon of erythritol has about four grams of total carbs, but zero net carbs.

I find erythritol…..yucky. Bought some in powdered form to make chocolate frosting for my keto microwave cupcake. 🤢 First time in my life I had to FORCE myself to finish a cupcake. (I hate to waste anything so I wasn’t going to trash it)

Not all sugar alcohols can be 100% subtracted. Many only 50% as they cause a delayed sugar spike.

Recent resesrch shows that eating erythritol increase blood clot formation that increase the risk of heart attack or stroke so it should not be consumed in dessert quantities. It naturally exists in nature but in tiny amounts when consumed. The keto and low carb community started using large quantities for cakes, cookies, desserts etc and this is way over the tiny safe amount you'd get naturally and they now know these larger amounts is not safe.

Dave I love your videos and I love seeing you cook in your kitchen. I am going to try out all three of these. I like having something sweet and low carb made up and either in my fridge or freezer to have a piece of in the afternoon with my cup of coffee. From my experience with using silicone with baking I still have to spray each cup to keep it from sticking. These Cheesecake bite’s would be great also made in the mini muffin size pans. Just file this information away in the back of your brain for when you need it. Ask Chat GPT for an easy Keto muffin recipe using Cottage Cheese. Keep your great videos coming.❤❤❤❤❤❤❤

Thanks Dave again...my Husband wants cookies every evening. I even call him my Cookie Monster, but certainly know he love either the chocolate mouse or the Berry thing! I fo often give him cottage cheese or Greek Yogurt with peaches or blueberries. I know they have less carbs than the cookies he buys! So, I'm trying. Then the little pie like things look good too. Love what you're doing, Dave! Honest cooking and trying your best. Regarding the sweeteners... I've done some light research and switched to only Allulose as my keto sweetener. It doesn't have sugar alcohols to give anyone tummy issues, and isn't toxic to pets like xylitol. It doesn't have aftertaste like stevia or monk fruit or the cooling sensation like erythritol. All you have to do is use a little bit more than called for as it is 70% as sweet as sugar. But it has ZERO carbs. Anyway, thought that might be something you'd want to consider. Good luck on your Keto journey.

Your videos are so real and so fun to watch. It's like you're hanging out with a friend while he experiments with recipes. Try monk fruit for a sweetener. Erythritol, if used too much or too often, can cause gas and bloating, and nobody wants that 😮

0:46 As a keto person, I would add some HWC to this because fruit will spike your BS. The protein curbs it, but the added fat helps even more. I have been making this with just cottage cheese, watermelon, 2 tablespoons of HWC, and 3-5 drops of Sucralose for a sweet summer treat. Eating plain Watermelon spike my BS as high as 178, but when I add cottage cheese and HWC, it spikes no more than around 130-136. Note Erythritol is a sugar alcohol. Zero carbs because you subtract sugar alcohols just like fiber from total carbs. Erythritol is a good sugar sub, but people should choose one based on whether or not it spikes their BS. They affect every person differently. Erythritol and Sucralose don’t spike my BS, but Xylitol does. I haven’t tried Allulose yet. It’s supposed to be the healthiest sugar sub available now for managing you blood glucose. Thanks for sharing these!

I love chocolate mousse I would definitely be using this chocolate mousse recipe with cottage cheese unfortunately I'd rather use organic sugar then fake sugar so it'll have carbs but that's okay it has more protein.I think cottage cheese has more protein than Greek yogurt which I'm more of a fan of the protein.
