a needed thingy most people should have when they have multiple vehicles and let them sit for a month or more is a car battery cut of switch. it connects to the neg post of the battery in the car and costs only $7 on amazon. They have the both for batteries with the top post, or the side connect GM type car batteries (like the RV in this video).

Cabinets/cubbies look great 👍, a leather strap handle would match them and lay fairly flat, or you can get some flush mount pop up/out handles used in the boating industry and by some RV manufacturers, that way you would have a completely smooth surface on the doors.

tip if you clear coat the crack first and then paint it will keep it from bleeding into the end grain.

I’m not too much of an expert with the woodworking either, but I think that cedar is just particularly prone to chipping like you’re getting there. It’s possible that you should’ve tried making multiple passes to get to your desired depth (if you didn’t) and that may have helped. You can also score the cut lines with an exacto blade to help prevent tear out. Also though, when working with cedar in particular you’d do well to wear a mask of some sort. The cedar dust is particularly bad for your lungs.

If you would have done pocket screws and a bunch of slots you could have made the pockets adjustable.... just slide it up and out and put it in a different slot.... I'm so in love with your Vintage RV.... I want one..!!!

You should be going left to right when using a router so the router won’t climb and for safety purposes. Also try a different speed if router has a speed control on it.

all the best wishes for the new year an added positive bout cedar is that it repels bugs as for the router : make sure that the direction of travel is against the rotation of the bit so it doesnt dig out the material but pushes it intoo the material (does mean that it pushes the router away from the material youre cutting away so youre going to go over it a few times to get the cut straight ) , putting some tape over the wood before routing might help against the tear out as for handles you could screw a bit of leather belt as a flap with a finger hole to the front of the lid , you can grab that to open it but it would fold over if you happen to land / sleep on top of them nice you've found someone to do the repair work on the body , hope the insurance payed out from the actual accident so it doesnt cost too mush extra , you could have the camper part itself (partly?) wrapped in vinyl and make the rv a billboard for the channel

Cedar is soft like you said. The best way to cut grooves is to make multiple slow cuts. Slowly cutting deeper till desired depth

Cut your slots, spray paint them, then sand off the overspill from the surface you don't want it on. Simples.

May I suggest you look around for pots & pans that don’t have a fixed handle. We use Tefal Ingenio but I’m sure there will be other brands available. They stack so well without the handles, especially if you keep the original packaging to store them in.

For handles on the cubbies, just chisel a groove on the bottom edge so your fingertips can get a grip to lift. This way nothing is sticking out and your cubbies would look great in a minimalist way. They look great!
