While it's not his field of expertise, was expecting him to know that a lot of nuts don't go that well with chocolate, especially with hot chocolate, because they tend to become really bitter (walnuts especially, that's why you never see them in chocolate)

However, I do think women make better home cooks because of their motherly instinct, plus they just know what ingredients work and don’t lol.

That's the fun of it, since they're in his restaurant, playing by his rules, and it's even more hilarious whenever he loses. I think he does have somewhat of a genuine ego, yes, but his entire celebrity persona turns that up to the max for greater entertainment value (i.e. when he berates bad chefs lol).

I really adore this lady's philosophy. She said a few times 'it would ruin the purity.' She believes in retaining the ability to sense the purity of the individual ingredients, so not messing around with it as much. Thats my philosophy too, and its quite rare. It's like when I was little and my mom chopped up a boiled hotdog to add to my mac and cheese. Terrible. Mac and cheese should never have anything extra to it. So I always ate out what she added first so that I was left with a good meal by itself.

Personally, I like grilled broccoli and/or bacon bits in my mac and cheese, and breadcrumbs on top is also a nice addition. Also I have a restaurant in my city that makes this killer sandwich with Mac and cheese, barbeque pulled pork, and caramelized onions, which I recreated at home with homemade everything and focaccia bread, and it was incredible. Highly recommend

@@justinmcgough3958 Mac and Cheese with some additions is nice. Add panko and melted butter on the top for some extra crunch to your cheesy gooey meal. Broccoli and corn is nice. Just make sure the broccoli is cut fine enough. (Cheeses: gouda and mozzarella) Another variant you could try is adding ham and peas. (cheese: cheddar and emmentaler / swiss) And as a 3rd chiliflakes and bacon. (cheese: cheddar and mozzarella)

He failed to do a good job on a brownie. Not the end of the world, everyone makes mistakes and everyone has an off day. For whatever reason, while Ramsey can make complex dishes really well, he seems to have some issues with simple ones, like in that one youtube video he did where he completely fumbled making a grilled cheese even though that's one of the simplest dishes out there. Super simple just isn't his strong suit.

from what ive noticed with Ramsay is that due to his culinary background he goes as fast/efficiently as possible rather than taking care for the ingredients, especially in baking where its a lot more casual than the restaurant chaos Ramsay conformed to

i should also note, he makes a lot of fancy dishes cause thats what fancy restaurants do, but from what ive noticed (and what some chef friends have told me) people like simple taste. I recall a post of a chef cooking for a wealthy family, and his overly fancy dish didnt do as well as the store bought kit based food. Obviously he didnt tell them that but they liked it a lot more i like to believe its a psychological game in cooking where something "fancy" seems appealing despite the simpler (often cheaper) foods taste better

First thing to note is that this is his own TV show, so if it bothered him that much he wouldn't have aired it. Second though, at least he goes up to the people and asks them why. I'd say that's what makes this kind of thing totally different from the the Kitchen Nightmares chefs who don't want to hear any criticism.

The main issue was likely that Gordon's chocolate flakes burnt, and they were so small by comparison that they cooked much quicker than the larger one. Rest in pieces tiny brownies.

That sounds highly plausible. Even I was looking at his strategy knowing something was wrong with lining the little pans with butter and shredded chocolate, but I couldn't figure out why it seemed wrong. I still don't know what real purpose it was attempting to serve. To form a crust, of sorts?

That's the thing with successful well established chefs, they tend to be overconfident and try to reinvent the wheel, when it's just not necesary, sometimes a recipe is already perfect and just needs careful preparation and cooking to make it as good as it gets. If it aint' broke, don't fix it.

Adding a small amount of mashed bananas to the batter actually helps a lot, but you need to exchange it with the amount of 1 egg. It helps keep it moist and adds a different flavor profile. Would’ve also tried to do a cream cheese/cheesecake style brownie instead, but if you are doing a classic chocolate, nuts are an acquired taste for the inside, but buttons are not needed…perhaps salted caramel chips for the inside only would have worked better. Also, powder is usually the better option as bar chocolate create as burnt taste when it cooks onto a pan.

I like my brownies plain and gooey as well. Cooking it in small individual containers will increase the surface area and will cause it to dry out. That’s why it’s only moist in the center. Jared Mueller, yeah, not the best thing to say, especially on tv to thousands and thousands of viewers, but to be fair I don’t think he meant it as an insult, but rather as complimenting women as better chefs than men. Although Gordon does seem to be rather sexist in some of his interviews notably in his earlier ones, it does appear that he cares about people and is a nice guy.

He has no saying in that. Before you participate in such productions you sign a contract, which will revoke any rights you might have on the material. So even if he wanted to it's not his decision anymore where this is shown. Any producer will make sure to get those rights from all participants, otherwise any idiot in a movie could prevent it from being shown for no good reason.

You don't just start a production company for a few tv series and even if you do so, there is still a big difference between personal interest and company interest, so unless you are the full owner of the company you still won't be able to just shut down parts that were produced, because you will have an actor contract with the company, even if you are part owner of that company. A few thousand production costs won't just get thrown out of the window by the production company just because someone has an ego problem afterwards. That's why they make strict contracts for the participating people in the production of film and tv series which revoke the personal rights on the material, so the production company can make deals where, when and how often the things are shown and also how exactly they present the material being filmed, which includes showing people in a worse spot than they actually are.

Understanding what random people would like or dislike should be a key part of the profession as a critic, but sometimes it is more about the aesthetics rather than the experience, which isn't very practical for a restaurant. The judges mentioned bitterness and dryness as bad points for him and the textural composition as good points for her, which is exactly what you should focus on with that type of cake. The chocolate in Ramsay's version might have been too dark, the sugar content too low and the addition of nuts is also a contentious choice, since many people don't enjoy it. His focus was clearly on the presentation of the food.

This is a great snapshot into how the reputation can tend to influence people into to thinking food from a known chef is simply good even though in actuality it's not. Basically, the placebo effect. this is not denial, he is astonished that some rival chef out preformed him. What a great sport, he even embraced her at the end. She won fair and square, Gordon wanted to improve his capabilities and wanted to learn from his mistakes. And that's exactly what he did! A good chef is always someone who takes criticism and changes his ways to make customers happy, and Gordon is a paramount to this belief. Change is a constant, and chefs need to keep up with change to always be on top of how to please someone. As it always goes, the customer is always right, because that's how you make them full, happy, and delighted at the experience!

If you are going to use pecans in a brownie or a cupcake use it as a confetti topping in a crushed form. Personally I would recommend covering the pecans with a light glaze of honey then sprinkling some brown sugar and cinnamon on top, then lightly toast them. Once toasted you crush them into bits and cover the brownie or cupcake after any icing has been put on.
