The lively Dead Meat host, he’s probably best known for the kill count videos of (usually) horror films, which bundles up a summary type video with fun trivia and sometimes even explanation of the source material if it came from a book. Really entertaining guy, but he also has a podcast he does with Chelsea, his wife I believe, usually on horror and famous films and filming locations and such. Really has his hand in everything if he’s been able to edit a video for the likes of a cooking tutorial, something I never thought he’d get around to doing. Good for him.

From other shows he's made, I learned one of Gordon"s favorite foods is traditional English fish and chips. I had to see how this master perfects it for himself. I make traditional Italian fried baccalà at Christmastime. The fish is dried salted cod that's soaked for 3 to 4 days, then battered and pan fried in a blend of corn and olive oils. No added salt needed. Oh, yeah.

@@johnnywoodmusic I pretty much gave the recipe! The batter is standard milk, flour, egg, a bit of baking powder, nothing special. I use 50/50 of corn and olive oils to fry in. Soak the dried cod in water over 3 days, changing the water half through. Cut into even bite size pieces, dip in the batter and fry them.

He never said the fries were healthy for you, this is something people interpreted, rather than what he "actually" said. He said it was so much more healthier because you take them out of the oil after the blanching and wait for the oil to reach the new, higher temperature and then return them to the oil. He said it is healthier than it would otherwise be because you aren't leaving them in the oil to soak the entire time you are waiting for the new temp to get ready. So, yes, technically it is healthier than leaving the fries in to soak for several minutes longer.

*THIS* looks actually *really* good!! Leaving the batter overnight seems to be the secret magic touch that turns the batter from a 'blah' kind of batter into something heavenly! I love the suggestions of seasoning the fish before and *after* the frying process as well as seasoning the flour. There's nothing worse than bland fried food. The seasoning of the fries is interesting, too! So far the best recipe I've seen. And only because some other cook's camera man said that Gordon's F&C is better! AND as a Continental European Asian (Korean) - I cannot STAND the idea of spoiling this beautifully fried fish with vinegar - shudder!!! I lived in the UK and NEVER had fish n' chips for that precise reason! I don't understand the English's penchant to put vinegar on everything! I might be tempted to try this myself!

Shourov Ahmed Frozen is the closest to fresh you can get, when it comes to vegetables. Much better than canned. He often tells home cooks to use frozen veg. Its when a restaurant uses precooked, then frozen dishes and serves it as fresh that he hates it. Because you can use SOME, not all, frozen ingredients at home, and come out with a meal 10x better than something someone cooked, froze, and then microwaved. And cheaper.

This is ABSOLUTELY amazing with fresh Walleye (pickerel). Our lake is full of walleye and sturgeon though the sturgeon remain in the deep areas. Walleye is available year round here and this recipe is just over the top. We mostly smoke the sturgeon and if we are lucky enough to get caviar, it is heaven but we mostly put the pregnant sturgeons back in the water. We will only take a spawning sturgeon if the hook has caused bad damage that will cause death if put back in the water.

As someone who worked at a fish and chip shop back in the uk i tell you blanching is a healthier way of cooking chips. Most chippies dont blanch theirs and you end up with a soggy mess of chips, blanching it and then frying it again in high temp actually makes it more crispier and much better. Reason for it being healthier is that it doesnt stay in the pan for too long making the chips take as much oil and therefore the reason for it being soggy

I cook a lot, but not professionally. You constantly handle hot things or burn your fingers and hands. Eventually you get used to it and your skin on your fingers and hands doesn't react to minor burns and you really don't feel it after the initial ouch unless it's a bad one.
