I've read or seen somewhere that he actually likes a Big Mac from time to time. But it's more like a guilty pleasure for him. With that said, most of his pickyness on kitchen nightmares and so on is mostly for show. It's an image he has to uphold. Something like a character he plays. He has high standards, of course. But here he was picky about stuff that normally would be considered "OK", or most definitely edible. Maybe apart from the French Fries in the Fish and Chips dish. They seemed burned. Because the show demands it.

4:54 - She IS actually right. Different varieties of potatoes can be very different - some make amazing chips, some are never going to properly crisp up. BUT that's why, if you want to serve great chips, you find what varieties available in your area actually do so, and then make sure to source those. Generally, these are called starchy or floury potatoes. What you don't do is buy a bag of waxy potatoes then complain they make soggy shitty chips... 🤦‍♂️ I think Denise is a perfect example of the Dunning Kruger effect - she thinks she's smart because she realizes different batches of potatoes are making different types of chips, but she's not smart enough to realize they're different varieties, and that she should find the best one and source that for consistent quality chips. Ironically, something any potato farmer could probably have told her... 🤣

Whilst it is an excuse, different potato varieties make better chips than others. She was using a potato with too much sugar content. That's why they looked burnt. They get quite bitter tasting when used for fries. I think she was basically just ordering 'potatoes' without checking what she was being sent. Also I don't think the oil was hot enough so the grease just soaked into the food.

I bet those fries were just parboiled quickly then dumped straight in the fryer, which was probably getting worked constantly without any time to allow the oil to come back up to temp. I've worked in restaurant kitchens a fair bit, used to see that all the time.

I actually went to Cafe Hon a couple of times after Gordon was there... they kept the changes in place for a long time but the last time I was there they had already repainted the walls to some ugly brown color and taken out much of the decor that Gordon's team had put in place. Also, the menu was reverting back to the old one- if I recall correctly the oversized big bay club with the questionable shrimp was back. When I saw that this place was reverting to their old ways I never went back.
