QUINOA CHIA BREAD: INGREDIENTS (1 LOAF / 10 SLICES): 300 g (10 ½ oz / 1 3/4 cups) whole uncooked quinoa seed 60 g (2 fl oz / ¼ cup) whole chia seed 250 ml / 1 cup water (use half to soak chia seeds and the other half to combine in the food processor) 60 ml (2 fl oz / ¼ cup) olive oil ½ teaspoon baking soda ½ teaspoon sea salt juice from ½ lemon METHOD: Soak quinoa in plenty of cold water overnight in the fridge. Soak chia seed in ½ cup water until gel like - this can be done overnight as well, but just give it a few stirs at the beginning. Preheat oven to 160 C / 320 F - fan forced oven. Drain the quinoa and rinse really well through a sieve. Make sure the water is fully drained from your sieve. Place the quinoa into a food processor. Add chia gel, ½ cup of water, olive oil, baking soda, sea salt and lemon juice. Mix in a food processor for 3 minutes. The bread mix should resemble a batter consistency with some whole quinoa still left in the mix. Spoon into a loaf tin lined with baking paper on all sides and the base. Bake for 1 ½ hours until firm to touch and bounces back when pressed with your fingers. Mine took 1 ½ hours (oven temperatures can vary slightly) but the bread needs the time to cook and for the quinoa to become tender. Remove from the oven and cool for 30 minutes in the tin… then remove from the tin and cool completely on a rack. The bread should be slightly moist in the middle and crisp on the outside. Cool completely before eating. Serve delicate slices only when cold with a serrated knife. Delicious lightly toasted on a pan.

I LOVE this recipe. I make the ultimate simple vegan pita bread for different kinds of meals with equal parts soaked quinoa and water. The times and temperature and oven proof vehicle are crucial. Think of a pizza; round thing plus parchment paper so things wonèt stick. The quinoa mixture can incorporate any flavoring one wants. Pre-heated oven 425 Fahrenheit; 15 minutes, flip (dead simple); 10 to 12 minutes on other side. Load with hummus or avocado or dip in dense brilliant autumn soups .. etc etc tx Yul Brenner showing my age. Tx again for great recipe!!!!!!!!

I'm culinarily challenged and even I could make this right the first time. It's really nourishing, packed with protein, and very tasty. We just had some vegan butter on it. Many spreads would work well with this. I used Pumpkin, Sunflower, Caraway and black Cumin seeds on top.

I'm very excited that I found your channel there's so many recipes that I would like to try. I prepared the quinoa yesterday followed the instructions -since I'm trying to stay away from oil I replaced the 60 mL of oil with half apple paste and half a almond butter. I also don't have a fan forced oven. It did look great as it was coming from the oven BUT after cooling when slicing it with a knife w- The knife as sticky so the inside of the bread wasn't fully dry. I don't know if it's the replacement of the oil or the no oven fan. Any advice ? BTY the link to the recipe is very helpful there's a small typo in that recipe it says 180° while both in the here video and the description it says 160 which I guess that's the correct temperature, so it would be worthwhile to fix the recipe in the link thanks again

Hello Fngr Tps, I have used 1/2 a teaspoon soda as in the recipe. Mine came out with a firm crust and a very nice texture inside, moist somehow, without really being fluffy. I like a dense bread and don't think this is supposed to become a fluffy bread.

Looks great. My only complaint is that you are combining metric and Imperial measurements at the same time. In some cases you are giving dry measurements in grams and liquid measurements in Imperial (1/2 cups). Time to re-edit.
