That was extremely helpful! I attempted my first try at making royal icing and I gave up because I couldn't get it right. After watching your video, I know exactly what my problem was. I didn't know I still needed to water down the icing to get an outline consistency. Mine was too stiff and so was my flooding icing. I loved how you went into detail about flooding icing consistency. I made this recipe today and it was my very first attempt at making royal icing and at decorating sugar cookies and WOW it was so simple I swear the hardest part was me thinking it was gonna be super stressful to make lol! The icing is good and kinda tastes like marshmallow which is cool! I used vanilla extract but next I want to try peppermint extract form some Christmas themed cookies!

I highly recommend gel food coloring, like Americolor brand. But you can use whatever you have on hand. If you only have liquid coloring, add the color before thinning to your desired consistency.

Yes, you can use a scribe tool, toothpick, or other thin pointy object to help smooth the icing. That won't help with a steady hand, necessarily, but it will help clean up some mistakes.

Royal icing is really best on cookies since it hardens. I would recommend a buttercream frosting for decorating a cake.

Great question! They are really only an issue with flood consistency. The weight of the icing when its thicker seems to supress the air bubbles from forming.

Yes, it'll harden completely after 4-8 hours depending on the humidity of your house. I like to leave cookies out over night (uncovered - the cookies won't go stale) to be safe.

The icing will not melt once it's on the cookie. It will actually dry and harden. It may take longer to dry and harden if you live in a humid area, otherwise temperature will not affect it.

Thanks! I will typically use a piping consistency to outline. But you can certainly use a 10-15 second flood icing to outline, too, especially if you don't have a lot of cookies to make and you don't need much piping consistency icing.

That's a great question, and you are exactly right. I like to color my icing prior to thinning it down for that exact reason. If you are using liquid coloring you may need to use less water when thinning to your optimum consistency. Gel or powder food coloring you may need to use a bit more.

That works. The difference is that royal icing sets completely hard and many people like using it to create very detailed designs. But that may not be your goal and that's fine, too.

You will only need a small amount for outlining. It takes approximately .5oz to flood a standard size cookie (3"x3"). If you have a scale, you can actually make a rough calculation of how much icing you will need and divide it accordingly. But I typically will make one small bag for outlining (like what you see in the video), and the rest will be flood.

I prefer gel, but you can use liquid. Add the liquid food coloring before thinning down to your desired consistency as the liquid food coloring will thin down the icing.

They won't get hard in the fridge if the icing is in a closed piping bag.

I'd recommend refrigerating them. If you leave them out, that's fine, but they may start to separate so you will want to knead the bag to mix up the icing again. The icing will separate more slowly in the fridge, but you may still need to knead the bag to remix. You can also freeze the piping bags if you aren't going to use them for a while. Just let them sit out and defrost for about 10 minutes.

Good question. I don't use egg whites, so you may want to look up a recipe that does. I'd assume that you probably want to whip up the egg whites to soft peak stage before adding your sugar.

As long as the icing is covered, the icing can be stored for a while. Here is my recommendation: to use within the day, cover the bowl of icing in plastic wrap and leave on the counter or in the fridge. To use within the week or longer, place in a storage container, cover with plastic wrap, then the lid, and keep in the fridge for a week or the freezer for a month.
