As an Irish person it was surprising to hear a Korean say potato was her favourite thing to eat. Having said that curry is my favourite, the hotter the better, so I suppose whatever is your favourite is fine. Those potatoes look divine.

Hi, I'm Korean living in Vancouver. I came here in 2013 from Korea. I'm pescatarian but I'm 90% vegetarian. Your videos are very inspiring when we know how challenging it is to be vegetarians with Korean cuisine. My boy friend can't eat your favourite potatoes, wheat, sugar, corn, white rice, and sweet potatoes. So there is nothing he can eat at Korean and Korean Chinese restaurants. :) Like you and your husband, we end up cooking our food at home. Thank you for your vulnerability, openness, honesty, creativity and courage. I know it's not easy especially as Asians who grow up being told it's a great virtue to always keep things inside. I'm originally from Aus, I grew up in Japan went to Uni, worked etc. Korea, my Korean friends and Korean food are one of my Favourite things in the world! I love love being around anything Korean! going to the Korean Supermarket KT Mart is one of my favourite things to do back home in Australia. Watching a montage of ur recipes it just hit me that korean food glistens...its shiny and has a reflective glow to it...is it because of the rice syrup or any other syrup that is used in most recipes...even gochujang is bright and glowy red as opposed to any other red, pasta sauce or indian curries for example... I just think its so interesting and fascinating. Love all ur recipes and narration Joanne. Keep spreading ur love of food and power of storytelling :)

i love potatoes, definitely 1 one of the most versatile veg out there. One of the most beloved foods in my family is the "tortilla de patatas" which is one of the most treasured and known dishes from Spain, where my mother is from and where i grew up before i moved the states. Such a humble but deliciously satisfying foods

The avocado and kimchi combo reminds me of that time last year at the beginning of the pandemic when I was home alone for a while and was OBSESSED with kimchi + hummus 😭 on rice cakes and toast, it was my favourite combo for so long

Fun fact. What you are calling French fries is really Belgian fries introduced by the Spaniards in the 16th century. If you look up the recipe for Patata Bravas you will see it is prepared and fried in the same way. The Patatas Bravas are sliced and diced in cubes, the Belgian fries in batons or sticks, measurement is ¼” by ¼” by 2.5-3” long.

Vegan cheese is something I struggle with. I have yet to find a good one. However, that cheese sauce looks amazing, and, honestly, I think I will make these soon. I have also been on a huge kimchi kick, so this just might be the perfect recipe for me at this time in my life!

Just an update: I made these but with russet potatoes and real cheese (it's just what I had) but I used the same spices and OMG YALL!! This is legit. So good! The kimchi topper! I hope to do it with the actual vegan cheese sauce once.

Mitski is my favorite, but i caution that sometimes her music doesn't make me feel good, it just resonates with my angst and pain. I have to be careful not to wallow too long in that.

Especially with lyrics like “You're the sun, you've never seen the night, but you hear its song from the morning birds well, I'm not the moon, I'm not even a star,” and “I’ve been big and small and big and small and big and small again, and still nobody wants me, still nobody wants me” it’s so deeply relatable that i can really only listen to her music when i want a good crying session lol. either way though, its absolutely beautiful at the same time, she’s an extremely talented woman.

Kimchi is basically fermented spicy Napa cabbage. When you make it you use a lot of garlic, spicy Korean pepper flakes and depending on the recipe, fish sauce or tiny brined shrimps. It’s not really fishy though, just garlicky and spicy and fermented and amazing.
