Did We Raise The BEST Tasting Chickens?
Our journey into homesteading is to be as self-sustainable as possible. We did not want to keep purchasing birds from hatcheries to fill our freezer. We also did not want to discount taste. So we decided to find the best tasting chicken that is also self-sustainable.

@@TheNakidGardeners Yes I have a preorder in for some chicks. they are $8 each here per chick. nicknamed the queen of chickens and the chickens of kings. have you heard that ? i dispatch my own quail. i’m not set up for that just yet but i do want the availability of meat .

In France they use raw milk and I do not think they drain the liquid. I used to ferment my birds' feed (when I had them) and I always mixed any excess liquid back in. I too am a foodie and am hoping to raise American Bresse next year. I enjoyed your vid, thank you!

Thank you! We are enjoying this journey of learning more and more about them! They really are much more delicious than regular chicken, even how we did it so improving our process is definitely a goal! We are up breeding our flock for other's to have them too.....many have been sold out of them.

Talking to and old chicken guy here in our town and he said the small birds are actually tasty. He was referring to bantams.

We couldn't raise those here. The owls and hawks would pick them apart on our pasture.

helped friends process 100 a couple of times. After the first time, our stations set-up to process quickly - worked great but it is work. My 9 y/o granddaughter little hands removed innards. She had a blast and great learning experience

That is correct. We have tons of clover and perennial rye grass in our pasture. Trying to get some other cover crop to make this pasture more grazable

Please keep it up! I’m learning so much from you both. I’ve kinda been put in a sink or swim situation with my mom’s garden and chickens. She had a stroke last August and is no longer able to tend either. Got 40 chicks in April, 29 have survived….. thus far. The only prior knowledge I had about chickens……. How to make the best southern fried chicken in the south! Thanks so much to you both and other content providers for expanding my knowledge base! The next project is to build your chicken tractor! Seems I really enjoy getting my hands dirty!! 🙏🏼

Thanks Don! We had no idea so many homesteaders were independently coming to the same conclusion as us in our process. A bunch of Breese videos are pouring out at the same time coincidentally 😅

We are going to try the Red Rangers.. We've never heard of the American Breast. We will practice processing with the Cornish Cross. We may need to sign up for your processing class. We will be processing the Rangers this Saturday if you are interested. The American Bresse taste soooo good. We have been eating on these birds and they are just juicer. Hopefully, they will start laying eggs next month. Yea our friends feel a lot more comfortable now processing their own birds and want to have a more sustainable bird.

A great retrospective of your micro farming experience so far, Sid and Tory. We are really impressed by how far you two have come and the overwhelming successes you have achieved. I really like that the Bresse are sustainable. I typically raise Cornish cross and have always wished I could breed my own! I’ve tried red rangers, didn’t really like them too much though. Great video can’t wait for the taste test!

Just subscribed. American Briss - yes. The Omish taught Stacy from " Offgrid w Doug and Stacy" to hatch out their chicks in the spring and butcher in the fall. The Omish know that the hens under 1 year will continue to lay eggs all winter without artificial lights. Then they rotate the 2 year olds to the freezer camp. Now that sounds sustainable. I am moving from Florida to The Missouri Ozarks later this year specifically to homestead and slay big deer. I like your style. Even if you are not an Army vet. Lol. 🦌👍🇺🇸

Just found your channel and subscribed we have had the bresse for awhile now. We have the splash variety. They do come in different colors not just the solid white. I think Homestead Heart has the black ones. We haven't butchered any yet because we are trying to build our flock numbers up ourselves. We also have buff Orpington black Australorp french black copper marans. Enjoyed your video look forward to more content.

When you do the special feed you need to confine them more and not free range them. I visited in france the region they raise these birds, they are moved into a barn, I believe I remember them putting them on 12 hours light cycle and feeding them first thing in the morning and again mid afternoon. But the confinement together with the special feed is what causes the marbling.

Yea we don't have the facility to do that, so we just did the ferment corn, and the meat still turned red with little marbling. How was your trip to France with experiencing that?

All i have ever raised is a breed called Banat Naked-neck its exepctionaly hardy and quite big , the best part is that its eazy to make it go broody and to hatch chicks while also being a great mother to them . In my region(Serbia) they are quite eazy to find but i guess it would be quite rare in the america .

Came to ur channel thru another bunch. I agree about the crosses. Corona really hit home how dependent ppl were on the hatcheries. I used to keep a mixed flock! Many breeds & temperaments.

Hey, having the dog next to the tractor as you try to capture the chicken might stress the chickens out and all that work you put in to marbleize them goes out the door instantly with their tightening and stress. Btw, I only know that by watching and learning from these channels.

I raise silver laced wyandottes because they're a good egg layer and also a large meat bird. More bang for the buck. I've recently gotten some easter eggers for additional eggs I never thought to look up the best tasting bird lol. That's pretty good. Hopefully ny birds taste good. Figured I'd wait until their egg production slows down before I eat and replace them

That's great news. We have a barnyard mix also. Once a hen is two years old her production starts to decline. Most people use 2 yr old birds as stew meat. We plan on replacing a few of our flock around this time next year.

awesome open and honest video, so many reasons, preferences and how to homestead, I am not in the meat chicken stage, I am getting some egg layers first and take it from there. I guess it's time for you to get a cow, that will help you with the milk cost if you are going to keep doing the feeding how you described,, very good video and keep it going

Thank you for the feedback. We started out with eggs layers also and turkeys. We aren't sure if the fermented corn in milk is the way to go just yet. We will see here in July. Having a cow isn't beneficial for us since it is just the two of us. Now a milk goat will possibly be better. Thanks for stopping by and watching

In the past we have done the Cornish Cross ,but this past year we decided to go with the American Bresse. Hearing so much about the flavor and all . Well ,we were pretty disappointed in them. I did a lot of research and try to do everything to the book. We finished them with corn and dairy (raw fresh milk from a farm). One they didn’t really have the marbling and we didn’t care for the taste or the texture. They were actually pretty tough. We went right to 16 weeks as recommended and still they were tough. A pro was they are excellent layers ! Very happy in that. But we also had a different issue none seems to mention. Several of them got dirty butts . And I was constantly washing and trimming them. I am a constantly cleaning my coop and we never have flies, mites . People are always amazed that they don’t smell poo at the farm from them. But I was raised that way in that my grandfather had a dairy farm and you never saw a dirty cow or dirty Stanton in his barn. Anyways I found out later that because this breed is so fluffy but it is pretty common for them to get dirty butts as when they poop it sticks to the fluff butts a lot and you may have to trim them or wash them often. As much as I liked the egg laying ,I couldn’t enjoy the meat. So in my opinion I wouldn’t get them again.

Oh wow. We have never had those issues with ours. I guess since we rotational graze our animals, we didn't have to worry about mites and smelly coop areas either. We didn't do the "true French" way. But we did do the 18 weeks and did a taste test. The people tasted it compared to Cornish X, who said the flavor was better. They were even amazed at the breast, which was very moist and not dry. All I did was just Redmond RealSalt and pepper. Nothing fancy. It's not for everyone but definitely the bird for us. Thanks for your feedback.

What would be a good meat bird that is a heritage bird? I hate the idea that you have to be dependent on hatcheries, but alas you only said what you don't like, not what you do.

The dominant white gene in the AmB means a half pound heavier bird. It might even need to be a bird that is double dominant for white, which isnt just about white expression, but the lack of the recessive non white trait.

I knew a women in her 50's who raised 60,000 chickens part time in addition to her regular 40hr job during the day! She has done it for extra spending money, and done it for years!!

Perhaps not buying milk from the store and using raw milk from a local dairy farm. Store bought milk is pasteurized and that could have something to do with the lack of marbling of the meat. Raw milk has a higher fat content, it's not heated thus not detroying beneficial nutrients, and not getting man-made vitamin D added to it which the pastrizing destroyed.

That is the exact details we kick ourselves for not measuring exactly. This breed notably eats 1/4-1/2 of all our other chickens if that helps give an idea. Have a blessed day!

Bresse are delicious, but don't do as well in a really cold climate, so I've been doing Delaware this year.

Interesting because you would think the American Bresse originated from France they would do well in the cold. We heard down to -10 degrees. However, luckily, it doesn't get that cold for very long here in Texas.

Curious the stores freak out but have u tried to compost your chicken manure and use it in part of your mix to start any seeds inside?

We are just moving the chickens across the land section by section and giving the land at least 60 days rest before running them over same area..... We do compost and vermicomposting and use those things further down the line when up potting the starts. 😊

Hey guys, we really appreciate your videos. We were wondering did you guys notice after all of the 2 week milk/corn finish for the bresse made a taste difference? Or did it not make a difference without the finish?

The taste is slightly better. IMO, it is more of the marbling and fat of the meat. You can render that fat down and use that instead of butter or oil.

That is an interesting thought. However, after tasting the American Bresse I wouldn't want to rush the flavor just for two extra weeks. Would you?

Did you isolate and lower the light for your 2 week finish ? Seems like not, since you were pulling them from the tractor.

No we didn't do them the true French way but the meat still marbled like red meat.

Just a note…. Raw milk. You need that butter fat in the milk to get the finish. :)

That is definitely preferable. We didn't have that initial option, it's still significantly better than them not being finished that way (we know the difference). Stay blessed!

@@TheNakidGardeners absolutely, I’m not sure if you guys are looking at milk cows, but consider a mini jersey, they can be pricy, but feed to milk and ease of care they definitely stack up :) none the less, great video :)

Thank you and great question. The Cornish X we got thru a bulk buy from our local co-op groups. They were $1/bird. The Red Rangers were about $3.17/bird and the American Bresse at the time we ordered them were $4.66/bird. Now they are about $9.99/bird.

That is FACTS 😅.... A great compromise is to have colorful and beautiful birds for eggs and the bland Breese for self sufficient dual purpose 😉.... What kind of birds do you have?

Just got my first American Bresse trio. I think it will be easier to process them and not individualize them with names etc.lol. I have found that true with black Australorp. All black or all white is easier. I love Buff Orpingtons and won't have them for meat. Have one that has a tilted neck that previous owner said is from injury as chick. She will be a pet with egg production.

I have been raising buff Orpingtons chickens that are supposed to be duel purpose breed but so far they are pets. I have had to rehome roosters. I have a few more that need new homes. 😂

@@TheNakidGardeners No I have not done that in many years. Although I would love too, just not able to connect with the right people so I could fully get back to the lifestyle. People who don't understand are hard to deal with in this manner. so issue after issue is not a way to get things done. I need my own land.

If not raised in Bress area of France they are not bress like Vidalia onion they are named for the area from but any American breed like barbed rock , Rhode Island red , and buckeye all are better

I agree. For the money. Nothing can compare to the Cornish Xs. Great for commercial and consumer produce. But for taste, American Breese is hands down.

Hello guys. I have also experiment with many breeds too. I don't like depending on other breeders for reasons you mentioned and many other reasons. I raised American bresse , love the bird but I wanted more. I did an a experiment like you guys did. I used two breeds, one Australorp roster and 10 American bresse hens. Just don't breed the offspring. American bresse don't need milk or any other bird for that matter. Especially water milk from the supermarket. If you want to give any bird favor, in the last week you need to confined them. Just give them plenty of chicken food. That would give them favor and lots of meat. You can't go wrong with a fat bird.
