I did similar run as Theodoro for the achievement, also allied Muscovy. Got a little scared when I got PU over them as I worried they won't be loyal. I had to expand like crazy until truce with Muscovy ended but it worked out at the end. Fun run :)

Just did a Gothic Invasion myself. Muscovy is a good ally, you dont need their land for the achievement unless they munch Riga. But in my case they didn't. When I finally got a decent size I got dragged in as a contender for the Spanish Throne against France. That was a nasty war, but from there on in it was just toggling truces in the HRE. AE is just a number right xD

You should play as Sukhothai, which is supposedly the hardest start in EU4 because they're the vassal of a Ming tributary, so to get independence you have to fight Ming as well.

I remember campaigning in these parts in one of my Byzantium runs where Epirus had allied Genoa. I trapped the Genoese army on Sardania ( or Corsica) and peaced them out for caffa and theodosia as well as Chios and lesbos. Quickly took Theodora and it’s ally Trebizond and then the Georgian and Circassian minors. I had basically outflanked the ottomans from the north and east by the time they attacked me ( and grown hugely in size). It was an unexpected and unusual run.

I will recommend a fourth strategy for Gothic Invasion which is no-cbing Riga when they become part of Hanseatic League and if Dithmarschen is also part of it, you can vassalize them and annex Hamburg as a starting base. That prevents the unlawful territory penalty until you peace Riga out and gives you a much powerful base with a fort and trade power. After you core Hamburg, peace Riga out and either make it your capital and sell the city of Theodoro or let it get annexed by a minor nation which you get 100 warscore from (preferably Circassia). I did both Gothic Invasion and Raja of the Rajput Reich achievements using that strategy.

May I suggest Karelia? Play as Novgorod, create two trading cities in Ingermanland and Soroka, delete your forts, give in to the demands of the Sami rebels, attack the Sami with no cb, white peace when they have been stackenwipened. Now there are Karelian rebels (if not enough unrest, lower the autonomy in White Karelia), give in to demands, truce break with no cb, fully annex, dev up Neva, then release and play as. Improve relations with Muscovy and build a spy network in Soroka and Sapmi while the coalition war fires.
