I know, I know. You can fight over politics, over money, even over religion but never bring up 'ribs' unless you expect some serious opposition and possibly offending everyone you know. I'm told the old Hatfields and McCoys feud started over dry ribs versus wet. I don't think those folks ever resolved their differences.
This week, I'm giving you a wonderful tasting alternative that will be easy to cook and prepare - EVEN if you don't have access to a grill or smoker. Try em! You won't be disappointed.
I start your Labor Day menu with dessert - and what's better than something, anything with peaches in it? This one skillet cobbler is just over the top in flavor and goes great with Vanilla Ice Cream. What better way to celebrate the end of summer than this dish. Also, I've included a twist on the typical Potato Salad using Cauliflower and no potatoes. Now again, everyone's grandma knows how to make an enjoyable potato salad - but this turn on a classic will impress you AND make you feel like you're eating healthy!
