My concern about shrimp now - polluted waters. I loved fixing shrimp creole and etouffee back in the '90's but sourcing "clean" seafood now is a problem.

I live in Louisiana so shrimp n grits is definitely on our menu! We love grits! Have you ever fried grits? I save my leftover grits put in a parchment paper lined pan kinda press in pan. Put in frig overnight then take out of pan slice the grits n fry them in a skillet till lightly browned! They are delicious along side fried eggs n some kind on meat!

I always use Quaker Five Minutes Grits cook about Fifteen Minutes. I cook Salmon Cakes with Grits I can of Icy Point Salmon take the bone out; and black ness Egg Dice Onions Bread Crumbs.; Black Pepperl;Mix up and make Patties.Small oil in the Pan to make it not so greases and Fry! Some people dice up Bell Peppers.
