Billy, the best looking thing to do is to put the refrigerator in the cabinet space. It needs to be recessed and then you will gain the space on the other side of the kitchen. You are really creating a working kitchen nightmare by having the refrigerator on the opposite side of the kitchen from your sinks and work area.

My 2 centimes: I'd recess the fridge in that space and then have 2 matching dressers under those lights. Fridge is gorgeous, but sticks out like a sore thumb in that spot. It's fun designing someone else's convent! 😂 Miss my French farmhouse kitchen my youngest used to scooter around in. Now I have a tiny galley in FL...::sigh::

I was thinking about that too. I kind of like the idea of either recessing the fridge in there or just putting the fridge against the "new" wall and opening the cubbard into the hallway as a niche of some sort. I keep thinking how much running around the cook will have to do to get from fridge to cooker to the sinks on the long wall… having the fridge closer to sinks and on the same wall as cooker would probably make a lot of sense..but of course I’ve never physically been in the space, so there’s that!

Yanis is a lean,mean,wrecking machine. That man takes no prisoners when it comes to demo. Billy your Dad works so hard, most men his age would be sitting back with their feet up. I can see he has built the work ethic in both you and Michael. Simon is a gem, such a team player and always with an eye for the History. Glad to hear the kitchen is finally going to be finished.

Put the fridge in the old cabinet space which gives it a built in look and gives you floor clearance freeing up where the fridge currently sits.

Those old forged brackets are also from a time where a person made what they needed, nails, etc. They are worthy of being displayed someplace, maybe a showcase in a hall somewhere with all the bits shown in their 200 yr old glory

I've said it before....Billy needs to get a beautiful antique glass front cabinet and display ALL these things you are finding, document what it is, where it was found and what it was used for if known. Simon one of the first jobs as an apprentice blacksmith back then was to master the art of nail making, these were the tasks given to them so master blacksmith could do the more skilled work. They were also a way of showing how well a blacksmith trained his apprentice so much could ride on this, the iron plate you showed etc.

Nails back then were very expensive to make and used only where they absolutely needed to be, which is why most construction back then was done with mortise/tendon and wooden pegs. Castles in your area would use very very few nails, mostly in things like drawbridges and doors to add strength, otherwise, the wood bits were all jointed. Great Find!!! Definitely one for the convent museum!

The rubble shute was really worth the money. It feels so nice to see things as tidy as you can get it. The forged items were really cool to see. A display in a shadow box to hang once the convent is finished would be a great way to show some of the history of the building. I'm really looking forward to seeing the progress at Simon's cottage. FANTASTIC decision to remove the kitchen built in cupboard HURRAY!!!! & you could always open it up in the hallway to make a recess for a bench seat or even a cupboard for storing coats, boots etc. A REALLY GREAT DECISION - well done. 👍👍👍

This! I'd been commenting on this since long before they officially decided to remove the cupboard from the kitchen. It would just add a lot of valuable storage to the hallway and if they opened up the matching cavity by the front door in that hallway then it would make for great symmetry and there could be two matching coat closets or bench seats or whatever they choose!

Although accompanying music to demolition matches the slo-mo demo-lition …the organic sounds of deconstructing the building sound good (beginning) the shovel, the whoosh of the shoot, etc. While I understand editing for just organic sounds (like ASMR creators do) is very tedious, I have to say I enjoyed hearing the organic ones today! I just love seeing the space completely opened up without those tiny rooms. Billy, it’s YOUR kitchen, you do whatever you want with it! If you’re happy, we’re happy.😊 ❤ Look forward on pins and needles everyday to see what’s next…

Suggestion for kitchen. Maybe recess refrigerator into the space where the old arched doors are. Balancing cooker and refrigerator on either side of entry door. Love the progress and Organ rebuild was amazing to watch.

Billy, you could turn that whole alcove into an amazing coffee bar area once the doors are gone. It could be a beautiful designated space with a fabulous coffee machine, maybe an extra little sink in there. A place to keep all of the syrups, nice coffee mugs etc... Some comfy chairs nearby? It could become an amazing functional feature. Another idea would be to put the fridge in there and board around it creating an alcove for the massive fridge. I have to admit, the fridge doesn't look at home between the beautiful windows.

This to preserve all the interesting and historically significant items you’ve already discovered and wish to retain, curated to be as they were found.

I haven't been reading comments, however, I hope it's been suggested that the new library include a display of all the interesting oddities uncovered in the demo. Like the metal bracket Simon discussed. You've found so many fascinating items.

Dear Billy and Friends, I enjoy your video and the renovation of the convent. As a person that’s done quite a bit of this type of work I have a suggestion for. I’ve always been told to work smarter not harder. A lesson I have been trying to implement as I’ve gotten older and more physically broken. So in your videos you have a wheelbarrow sitting beside the mud and clay. I don’t know when the wheel was invented but that tool has one. It’s designed to put loose material in to make it easier to move heavy objects or a lot of loose materials from one spot to another. So as a thought instead of you and your friends shoveling the rubble walking around the empty wheelbarrow across the entire length of the room and tossing it in the debris shoot one shovel at a time. You might consider building a temporary ramp and dump funnel to utilize the wheelbarrow for what it was designed for. Load the wheelbarrow up at the debris pile push it across the room up the ramp and into the debris funnel. Less effort and much safer for everyone. A talented man like Simon could whip up a ramp and funnel in no time and could be utilized in other parts of the building when you get to it. Yanis “The Wildman” would love to run up the ramp with a full wheelbarrow of debris. Just saying! Lol!

I would turn that cabinet into an alcove for the refrigerator, because the refrigerator is kind of awkward sitting out all exposed the way it is (and too modern for the room) And then you’d have the space where the fridge is sitting now to put your wall unit. Either that or turn the cabinet into your coffee station

It seems in every project there's a spot where you keep working on it but it still doesn't feel right. But then with the passage of time something 'clicks' and you get the insight of how to move forward. I'm glad you kept working on it, Billy. I see the empty wall space next to refrig. With an upright freezer. I’d encourage keeping the back up eco flow for the refrig/freezer that may be full in the future (in a different space). Guests might also like temp. Safe food during a power outage! Really enjoy each of you and seeing the convent come back to life. 😊

Another change to make in the kitchen is to raise the long work island in the center enough to allow for the cooks' toes to go under, called a toe kick. The way it is now, they will be bending over uncomfortably - all day - because this part has been forgotten. Also the countertop doesn't project the inch it normally does, helping again with one's posture for hours. This could be solved by adding a strip of oak down the center of the counter, matching the counter's thickness and finish.

Hi…Arnold says to get a 5-gallon bucket and shovel the debris into it then dump the bucket into the chute…saves many trips walking to and from with shovels :-)

I think your decision about the cupboard was a good one, Billy. Sometimes we just need to mull things over and ponder a bit before making a change. One thing you may want to consider: most of the furnishings and appliances are pretty much of the same height. It might be nice to have a furniture piece that is tall-to bring the eye upward. Not only that, it would provide more storage. The proportions will be key, too.

I’m sure you’ve already thought this through, but I’d suggest putting the range cooker, fridge and bench tops all on the same side of the kitchen. Otherwise that’s a lot of walking to be able functionally cook something in the kitchen. Maybe put all the decorative stuff together, and all the cooking stuff together.

A very large commercial sized refrigerator freezer would fit nicely in the area where the cupboard is. That way, it would look like a refrigerator just sitting out in the kitchen. It would be tucked nicely into where the cupboard is and look like it is built in.

Thank you so much ! I just wanted to say thank you for being so conscientious and reusing what you can, recycling what you can, and saving as much of the history of the convent as you possibly can . I think it is just wonderful to watch Simon as he discovers so many of the original 200 hundred plus years of unique hardware and artifacts. It’s just amazing how times have changed. We really do take so many things for granted nowadays. I can only imagine how many hours and hours and hours of time was spent making the nails and the brackets for the château. Can you imagine what the men who forged those would think now ? Probably something along the lines of - - they sure don’t make things like we did !! Things were made to last and last they have !

Well done! You all deserve a day off had a busy week. Actually I think you might want to add a convection oven to the kitchen. I like that you will just hide the cabinet and not actually take it out. Regardless of who owns or what the convent will be in the future it will be beautiful and usable to someone. Have a great day working at Simon's house

Agree with kitchen decision. One suggestion. The fridge looks too modern next to everything. Please cover it like an old icebox like the one in Ed’s kitchen at LaGorce. It would look fantastic. Y’all are working so hard. The results are beautiful.

actually, the fridge goes really well with the new cooker, aka (stove) and it goes really well with old cooker that is in the fireplace. it will look FAB, with the cabinets and counter tops.

I'd move the refrigerator off of that wall and put it there the closet is. It doesn't look right floating in nowhere land. A piece of furniture on the other hand would look lovely there.

Billy love the new kitchen except the refrigerator is too small and here in the US we would definitely put a larger Subzero size or knock off in the old cupboard. It's the perfect size and a great use of the space.

Re kitchen cupboard. A carpenter could make and fit a jib door over the cupboard which would hide it, but also provide access if wanted. Free standing furniture in front of it can be wheeled aside.

I agree with your decision to plaster over the cupboard in the kitchen as I always thought it looked out of place and didn't fit in with the room decor and functionality. It's all part of the process and if it doesn't work change it and move on. Good job Billy for not being afraid to change your mind.

@@ThePethericks maybe not multiple times but once fines for an unsecured load here in California are astronomical even a truck load of dirt has to be tarpped. I have often marveled at you driving off with unsecured materials to the tip just never commented.

It's great having Simon with the crew again. His pauses, for our benefit, with his observations concerning the process' of the craftsmen of the past. The tedium for the Young apprentice, of 200 odd years, ago making nails at the anvil day after day. These are the things history books ignore. Thanks Simon.
