Thank you so much! I am obsessed with what the Italians call the Cucina Povera, the kitchen of poverty! Poor people make the best food! God bless you ma'am from the great state of Texas in the US! I cook every day in my RV, or what you call a caravan, and it brings me great joy! My maternal grandmother was from northern Maine and she taught me this recipe, it was from WWII when there were shortages: one onion chopped, sweat in butter. One or two russet potatoes, cubed, cover with plain water and cook potatoes until tender. She peeled hers but now I scrub a russet or two and don't bother peeling! I also add cubed ham or some bacon slices to the onions and butter. One can of evaporated milk and one can of creamed corn. Add salt to taste at the end! This is a great base if you have any fresh clams, as well! They didn't have fresh produce during the war so they made due. Heat thru until warm! I grate cheddar cheese on my soup and add fresh ground pepper but do as you please! Grandmother Claire would be so thrilled! With bread and salad this is a complete meal :) Bon apetit!
