Thank you for this recipe! I just got my Ninja Foodi for my birthday, and we happen to have an overnight guest during the week. I had to work, so couldn’t spend a bunch of time cooking breakfast, and thought this looked noise an easy solution. I did modify it a bit - added a pound of browned breakfast sausage and 4 oz diced green chili- but the Foodi did great! The bottom was not burned after 10 hours, and I LOVE the ability to melt/brown the cheese on top! Our guest loved it too! Keep up the good work!

I've been a silent viewer for a while and I very much enjoy your recipes. I have quite a few food allergies/intolerances, so having simple recipes like yours make my life a thousand times easier when substituting ingredients. I did have one question, have you tried this recipe with veggies? I think it would be delicious adding some spinach, bell peppers, etc. but I do not know if I would need to adjust the cooking time so they don't turn mushy.

Hi and thank you for watching! I'm thrilled you are enjoying my recipes! I haven't made this with vegetables, but I think it would be delicious. In my written recipe on the website, I list this as an option. I honestly don't think the veggies are going to get mushy with the low heat of the slow cooker, but I am not 100% sure and this is a great question to bring up. I will have to try it and see. I would decrease the heavy cream a bit to make up for the liquid that veggies would release. Spinach usually does really well in dishes like this, peppers too! If you try it before I do, please update me with your feedback! Have a great day.

This was awesome. It was my first time using my foodi and came together wonderfully. Though I used country style breakfast sausage and the grease rather that ham and butter. It will now be a staple of my monthly rotation.

this looks really good, I think if you wanted to use the Yukon gold potatoes you could just Sautee them longer so they get a chance to soften up a bit more before the slow cooking...they would pick up more flavor from the onions and butter too...or just soak them, as you said this releases the starch so they will soften more as well.

I am just wondering if you've tried this with a crust on the bottom? Would that turn out well using the slow cook method? This would be so amazing with some type of pie crust or pastry crust. Perhaps the 4 hour version?

A good shortcut IF someone didn't have potatoes on hand, couldn't get to the store, wanted a literal dump/go & happened to have this among their freezer stash................. could prob substitute a small bag of those southern style frozen hash browns. The potatoes already peeled & in chunks. ;) Just a thought, idk if they'd work OR be as good, tbh. Thanks for sharing, looks yummy!

This looks like it would be a great recipe for a crowd. If making it with sausage, it might help to add a teaspoon or so of dry mustard and worcestershire sauce plus salt and pepper. The reason I say this is because my breakfast casserole has these ingredients (but it is also made with bread cubes instead of potatoes). I'd be interested to know what you think. I really look forward to your new recipe posts! Always wondering what you will come up with next!

Wendy Weir i wouldn’t think to put dry mustard and Worcestershire sauce with sausage, but it might work fine! I can’t say I’ve had that flavor combo before. Definitely salt and pepper if using sausage.

@@TheSaltedPepper Our family Christmas breakfast casserole recipe is as follows: 1 lb pork sausage, cooked; 8 eggs, whipped; 5 slices bread, cubed, crust off; 1 tsp. worcestershire sauce; 1 tsp. dry mustard; 1 tsp. salt; pepper to taste; 2 cups whole milk; 2 cups shredded cheddar. Spray 2-1/2 quart casserole; layer bread cubes, meat and cheese. Combine eggs, mil and seasonings. Pour over all. Refrigerate overnight. Bake in preheated 350 degree oven for 45 minutes.

@@TheSaltedPepper What I am thinking is that the mustard and wor. sauce is for the egg/bread/milk combo. Yours uses potatoes, so I see why you wouldn't add them. And, your eggs are more of a scramble than a custard. Makes total sense, now! Dang! I'm learning so much from you!!!!

Hi Louise. Your easygoing presentations are a real treat, and the Overnight Breakfast Casserole sure looks like a keeper! Cooking now just for myself and even halving the recipe, how would you suggest storing and reheating the leftovers to avoid drying out? Many thanks for all your work and great ideas, including my new word "One-derful" :)

LOL! I LOVE it! Isn't it One-derful! LOL! To answer your question, you can certainly refrigerate it or even freeze it I would think (I haven't done this yet). To reheat it, I definitely would use the steam function on the Foodi and make crisp that cheese at the end. You can do that in a few different ways, Wrap your portion in foil and set in the basket or rack with 1-2 cups of water in the inner pot. Set the steam function (valve open) to 10 minutes and you should be good to go. Then AC the top if you want. Or you can put your portion in a pan of some sort, cover and follow the same steaming instructions. Eggs are dense, so check the middle temp to make sure they are hot enough for you and you can steam a few more minutes if needed. Hope you love it!

If I was going to do it that way, I would probably steam it to cook it so it doesn't dry out. Baking might overcook the top and leave the bottom underdone. Definitely doable!

Yum! I haven't used the slow cook function yet on mine. This would be GREAT for a holiday breakfast Casserole when you have family overnight on Christmas eve or for Thanksgiving morning with guests coming over! I have been baking a very similar one for Christmas morning for 30 years, but had to prepare at night and hold in fridge all night and get up really early to cook for 2 hours in the oven. I can't wait to try this sleep in later and eat much sooner. I wonder how it would be with chopped green chili's in it? Once again, THANK YOU!!

My Ninja Foodi came with a glass lid with a vent hole - that I thought was for the slow cooker function. Would this lid allow full cooking like the steamer/pressure lid? It seems that the steamer lid will keep in more heat and moisture. What are your thoughts? Do you have the glass lid and what do you use it for?

I don't have the glass lid, but I do think it is for slow cooking only. I would use the PC lid for steaming.

Louise, how would you reheat the casserole other than using the microwave? I don’t like using the microwave as much anymore since I got my Ninja appliances (6.5 & 8 quart Foodi, Air Fryer, Grill). I think the Ninja appliances are safer than microwave cooking and reheating.

I make an overnight breakfast casserole at Christmas with ham, cheese, mushrooms and tomatoes - but with bread cubes spread with mustard rather than potatoes. Do you think - or know - if a bread pudding like that would work in the Foodi? Slow cook or bake? I let it sit in the fridge overnight and then slowly cook while we enjoy tree time Christmas morning. It would be such a blessing to do it this way and have no watching for spills or timing issues for done. What do you think? I am loving your videos, etc. Thank you!

I would definitely slow cook it and not bake it. When you slow cook, the heat is generated from the bottom and I think you will have much better results. When baking, the heat is generated from the top and there is that fan circulating the air. This will cause the top to get too done and dry before the bottom cooks. I think your Christmas casserole will be great slow cooked, but keep in mind, it will take 4 plus hours even on the high setting. The Foodi slow cook feature doesn't get as hot as other brands and that is what makes it my favorite slow cooker. Other slow cookers aren't even slow cookers really, they boil the food and the temps are too hot.

I am going to try an overnight slow cook with my recipe. I think it should work with the “pudding” staying tender. The slower time to temp should give nice absorption for the bread. I’m excited - one less headache Christmas morning! I’ve made this probably 20 years, but never liked the thought of it in my standard sc machine. Too much toughness near the edge.... @@nelesonntagodo I just saw your request now - sorry! I converted this from a strata recipe, so it is meant to sit in the fridge overnight, ready to bake in the morning. It will easily serve 6 - 8. This is my Christmas Morning Breakfast Spoonbread. The proportions that work for me are: 6 c. cubed bread ( I spread a bit of mustard on half of the slices before cutting into cubes - and use half wheat, half white bread. Your choice. The mustard is nice with the ham, but is just a hint, so not remotely a dominant flavor), 2c. quartered mushrooms, 8 oz cubed ham, 10-12 oz SMALL cubed hard cheese (my mix is cheddar and mozza), 2 tomatoes diced. Mix together and put into greased 12 c baking dish. For liquid: 6 ex lg eggs to each 1/12c. milk is my ratio. Beat together to mix, LIGHTLY salt-and-peppered (less is best). Pour over bread mixture. I make the liquid in increments starting with this amount so that I don't make too much. Gently press to see if all of the bread can get down into the milk mixture. If not, you need more liquid. Use the same ratio. 2 eggs + 1/2c milk, 3 eggs + 3/4c, etc. Once the bread is covered, that is when it is enough! You don't want too much liquid or it just takes too long to bake. Every batch is slightly different, depending on the baking dish shape. (Most often it ends up with a total of 9 eggs and 2 1/4c milk) Cover and put in the fridge until morning. Christmas morning, heat the oven - and pop it in! I bake it in a 350 oven for around 1 1/4 - 1 1/2 hr, but always check for when the centre is done. It could take longer, depending again on the dish shape. No worries. Put a lid on for the first 3/4 hr, so it heats up faster. I like to add grated cheese for the last 20 minutes or so. (Not before, or it can form a "crust" and change the cooking.) We honestly love this breakfast and any leftovers are fabulous warmed up. I have no clue if this is going to work in my Foodi on SC, but I'm going to give it a try. I think it will. The slow rise to heat should allow the bread to soak up the egg mixture for a nice "puff" when it is cooked. We'll see! It's the kind of recipe that really can't fail, just may take slightly different time and temp settings. Our Christmas mornings are slow and easy, so it's no worry. Oh - and if you want to include onion, just coarse chop and saute or microwave it to translucent before adding to the bread mixture. It won't cook enough from raw.

How is this warmed up? With only two people in my household, we would need to eat this over several days. Also, have you tried it with a more flavorful sausage, like an Italian sausage? Or with bacon?

I use the steam function for reheating almost everything. I bet it would freeze fine too, although I haven't done that. I used a regular breakfast sausage, but I go over various options in the written post. I think bacon would get too soft, but if you don't mind that texture it would work fine.

Hi, in my Ninja Foodi, the slow cook for 8 hours is actually the yogurt function. I followed the recipe, chose the 8 hours slow cook but unfortunately it didn't cook at all. In the morning it was just warm liquids, not a casserole. What did I do wrong? Thanks!

Someone else asked about that and I think she made it with frozen hash browns without any issues. I have not tested it that way, but I think you'll be fine. They might give off a little more liquid, so maybe decrease the cream by 1/4 cup. Let me know how it works out for you!

The Salted Pepper i have had bad experiences with freezing cooked potatoes (I am not talking about mash). The texture goes mushy and the flavor changes to something that no longer reminds me of potatoes. It is a shame really... ☹️ Have you not experienced that?
