8:04 We actually don't have "lo mein" in Malaysia. Although we do have what is called "konlo mee" (干捞面) with an added "kon" to the "lo-mein". (Kon is Cantonese for dry. Mee is Hokkien for mein). Konlo mee has a dark sauce and normally topped with charsiew, choy sum, scallion, and served with wonton in soup. Also, it's likely the sauce contains lard for umami.

I always learn *something* when watching your videos, but this time, with four separate recipes presented, my (so-called) mind is swimming. Thank you!! Hope the whole fam enjoyed a vacation break ahead (I assume) of school restarting. And not "on the road 4WDing" this time. I really get a kick out of your campground driving and cooking adventures, and your "rescue" of a paella dinner in the backyard. Brava! And bravo to the indomitable Dude and the kidlings (Saw them cellos, kids)! Speaking of "Simple", cooking in a rental was also a delightful video. My body is running down (I'll be 70 this coming week (weak?)), so I order delivery more than cooking for myself (single fella). There are two Chinese restaurants in delivery range whom I often order from, and always enough to feed me for two+ days. Lo Mein is always in the order, and satisfies me a day later for breakfast or lunch. Sometimes with chicken; sometimes beef; sometimes pork; sometimes veggie. All are satisfying and happy-making.

Mincing garlic with a knife is one of my least favorite kitchen tasks but I haven't found a garlic press that works very well. Usually a lot of garlic gets jammed into the corners inside the presses. I might splurge on a garlic twister though, might also work well for ginger.

I don’t think they taste anything alike. I personally do not like oysters but I love oyster sauce which is slightly sweet and mostly salty. I find hoisin is mostly sweet and has a completely different flavour. If you do not want to use oyster sauce, you can sub more soy sauce.
