I use the meat tenderizer and hammer out the lemongrass before finely chopping it. (Less waste and not as fibrous).

saving me here. we love oriental food of all kinds but costs have gone out of control. i love cooking more than anything so your channel makes it very easy to try a new dish anytime we want and now even far east wonders are still within reach. thankyou. by the way the "butt" of the onion is known as the mustache in my house. galloping gormets tag....so yeah thats from the 1970's.

I always saute my onions, as well. Raw crunchy onion is for example in turkey dressing puts me off as it tastes undone !

Sauteed onions and shallots are good, but if it's to be added as a seasoning or marinade to raw meats etc and will be cooked, then that adds the flavor to the meats as it's being cooked, as it cooks with it and springs it's juices , as in this case the meatballs. Just my thoughts.

Very tasty thanks I couldn’t up load the pictures I made it, very nice Instead of chopping the lemongrass I chop it and boiled it with little water, used the same water to make a corn starch mix after it cool down The sauce I just used Thai sweet and chilli , lazy 😅

Yes! I knew there was something about your tastes that I identify with. Raw onions no, grilled absolutely! It turns out so many people are allergic in varing degrees to raw onions. I am partially allergic to raw onions. Green raw onions will almost kill me. Can you imagine, my dad forced me to eat (the white part) raw green onions as a kid. The green part is the worst for me. Sorry! Allergies are no joke. Love you Flo and Dude! Got your book and can't wait to get started. Thank you!!! I envy you Dude!✌😘👌 💞💞💞💞💞

You can probably decrease the sugar in the meatballs but the dressing does need that amount to balance out the salt and sour.

I don’t necessarily prefer corn oil but it’s what my mom used. And I get a free jug when I buy 2 sacks of rice. LOL! Otherwise I buy whatever is on sale between vegetable, canola and corn oil. 😉

Assuming this serves 4, sodium is pretty high. Just the 4 tablespoons of fish sauce and tablespoon of oyster sauce adds up to about 7000 mg total. This dish looks to be about 2000 mg sodium per serving.
