As a professional baker of 26+ years and have worked for the largest donut manufacturer in North America for the last 8 years. Must say you did fabulous! Next time use your scraps to make Apple Fritters or Fruit Fritters i.e cherry or blueberry. Use canned Apple pie filling or make your own, cinnamon. Use your bench scraper and chop all together, form a fritter add some flour. Let proof and yummy Fritters! Also, dipped donut should be cooled before icing, preventing the icing from melting. Glazed and sugar always hot like you did! Hope you find these tips useful! Your channel is awesome ❤

Watching while I bake/prep for Easter lunch. My 3yo walks by and asks what I'm watching. Before I can answer she heard your voice and said "Oh! Becky - instead of tossing the extra dough, save it to test your fry oil temperature and then to test the set on your glaze. My baker-grandad used to call those testers all the way around and he said they tasted just the same 😊

You also took me back to my childhood. Mom made bread every week. Seven of us kids! She had a rectangular Dormeyer fryer and always reserved some of the bread dough for donuts. Also would put sugar or sugar and cinnamon in a paper lunch bag and then donut gently shaken inside. The hot oil fryer was a big help. Kept temps more consistent. She used it a lot. Fried veggies with batter coating. Mushrooms, cauliflower etc. bread making day in summer kept us kids close to home! lol. She also raised a huge garden. Dad was a railroader always gone. Raw milk and butter from neighbors. Not much money but we sure did eat well!

You are taking me back to my childhood when mom would make the glazed yeast donuts. She let her rise overnight. Once glazed and cooled each donut went into a plastic sandwich bag and the they were placed in a freezer bag and frozen. Dad took one in his lunch box everyday to work. Added to that was a sandwich made on one of her overnight buns and fruit. Wish mom and I could do still make them. Thanks for reminding me of this

Becky, I pulled out my Great Grandma Jones Best ever doughnut recipe. It is a cake flour also. The ingredients are so similar. I love this type of doughnut best. We were a family of 10, 4 boys and 4 girls . It took several batches to get our fill plus some for lunches. I should make some for my grandchildren and tell the story behind making them. 😊 Thank you for sharing and the memories😊❤

My grandfather loved to cook and bake and after my Dad retired he started making more and more treats as well as meals too. When it comes to doughnuts I remember one that was requested often for breakfast. It was a glazed with a cinnamon crumble on top. It was like having the best coffee cake topping and a doughnut all in one. Yummy!

Becky, here’s a suggestion for something to make with the leftover raised donut dough. Chop up the donut dough using your bench scrapper-then add in a can of your favorite pie filling (traditional is apple) portion them out in 3 oz mounds and let raise to double then fry as you did the raised donuts until they are a deep brown. Glaze while hot. These fruit fritters always sold out fast at the donut shops we worked in.

Hi everyone! Here’s something I’ve learned about active yeast from watching countless hours of baking channels… if you know your yeast is good, you really do not need to proof/bloom it. My mind was blown so I tried it. It worked! 😃 I just threw my yeast in together with all of my ingredients and my buns rose and baked up perfectly. Now, if you aren’t sure if your yeast is good, *THEN* you’d want to “proof” (proving that it’s alive) it in a slightly warm sweetened liquid. I still tend to proof my yeast out of habit, but good to know it’s not 100% necessary. I’ve always wanted to try donuts, so thank you for sharing your experience with us Becky. It looks fun! 🍩😊

When my kis were about 8, 7, and 5 we had to work cattle on a absolutely miserable day. Snowing sideways. Took a break and made doughnuts and homemade hot chocolate. Got warm by the fire. It was hard to go back outside to finish but we did with a full belly and a smile.

Becky, take the time to tighten the head of your Kitchen Aid. If you lift up the head, there is a screw inside the stand. That's what needs to be tightened. Love watching you. Take care.

My mom owned a donut shop for years. My 2 sisters and I had to work in the shop and started hating donuts or anything to do with them. A few years ago I started eating them occasionally and would love to make them for my kids who love them.

My mom used to make the old fashioned donuts and she cooked them in lard. They were so much better than cooked in oil😊

So did my mum and granny too and I think they probably used common "cinnamon roll" yeast dough. Oil was fancy in thoose days but lard was cheap.

Our favorite donut place here is known for their specialty donuts - you can order your name in donuts and they'll decorate them however you'd like with whatever flavors & colors. A lot of parents order for their kid's class and so the kid's can celebrate birthdays at school. And they've done the "will you go to prom with me" donuts and all. And they make amazing beignets and cronuts!!!

When our boys were young, we would make home-made cheater donuts on the first snow of the season. We would use the biscuit dough (the 4 for a dollar pack) and just poke a hole in the middle of the biscuit, stretch it out a little, then deep fry. They are quick and easy, and the kids loved them.

I'm pretty sure you could freeze well with the yeasted donuts. Just like bread or pizza dough freeze well. Let it double in size then fry. The baking powder ones... My intuition is saying freeze after cooking like pancakes and waffles... Haven't seen anybody freeze pancake batter, raw. 💖🌞🌵😷

Becky if you place the donuts on small squares of parchment paper instead of the big one, when its time to put them in the oil you can just pick the whole thing and peel the paper off, helps with not accidentally crushing them. they looked beautiful though. Best donut i ever ate in my life, no hole filled with egg/ vanilla custard, dipped in hard chocolate on one side and powder sugar on the other.

To make the donuts even easier use a donut pan and bake them. So easy, less messy and not using all that oil. Better for you I would think. People seem to love when I make them. I've made them numerous times. Thanks Becky

I have used 2 recipes in the oven. One from Sugary Sweets Apple Cuder Donuts and the other which uses spice cake mix, eggs,oil, and can of pumpkin puree. Then use cinnamon sugar topping. Yum

@@donnawisner1481 , yes! That's what I need! My back can't take all that rolling, cutting, frying and cleanup! My mom used a donut maker. She'd put the batter in the "hopper", hold it over the hot oil, press the lever and a ring of batter would gently plop into the oil. Much easier but still standing at the fryer makes it difficult for me. Thanks soooo much for your comment, it really helped me! 💖🌞🌵😷

We do not have one single donut shop in my town. If you want a donut, you need to buy them at Safeway, QFC or Walmart. I don't consider those true donuts. Yours look absolutely great & delicious. I don't know if I'll make them but thanks for showing us how! Oh & BTW, I love the re-rolled donuts with the layers. Looks fun to "pull apart". Pull apart donuts is a good name!!

YES ! My mom used to make old fashioned donuts and she fried them in lard... And she never sugared it or anything. We just ate them plain and they were delicious. She would also make chocolate ones which she put in a brown paper bag with sugar and shook them up to coat them, and then she made molasses donuts. And oh my goodness they were playing as well. Nothing on them. I miss my mom's donuts 😞

The fruit powder sounds yummy. I would sift it in with the powder sugar to prevent it clumping. Thanks for the idea my husband will love the strawberry.

The donut you like is called a cruller not a curler. And they are yeast donuts and do kind of look like your Frankenstein donuts lol.

there is also something called a "cro-nut" made with croissant pastry, then fried. I live in the South now, and I've learned that around here, if it's not nailed down, someone's going to deep fry it and feed it to you!

The scraps are good for testing the oil and for the cook to taste the final product.

My husband and I used to own a donut/pastry shop in coastal North Carolina. It was a handmade shop, not one of those robotic systems. We cranked out 300 dozen yeast raised donuts and 200 dozen cake donuts every morning in addition to the danish, muffins, cakes, etc. Yeast rings were the first cut, the second cut were the shells for filling with jellies, custard & creams. The 3rd cut was for cinnamon rolls, cinnamon twists and the scraps went into a bucket then finally tossed with apple pie filling and cinnamon to make apple fritters. It was a blast and an experience. It was WORK. Glazing should be done while hot. Icing (ie chocolate) should be done once cooled. Traditionally, cake donuts are batter dropped into the oil using a batter bowl with a trigger. They aren’t cut from the yeast mixture.

Well done Becky for your first attempt at making donuts and both types to boot! I would love to give it a go myself, but myself I think I would try the cake donuts myself first. Plus I absolutely love nutmeg, so that won’t be a problem for me and my family.

This reminds me of making rosettes...a ( Norwegian, I think) cookie that I make at Christmas time. I recycle my newspaper where you use parchment paper and put that under my wire rack...bc why waste it? If you guys have never heard of Rosette cookies, it is a batter almost like a crepe batter, transfered onto a hot iron and then the cookie drops off into the oil. You will need a Rosette iron to make them. If anyone is interested in making them, I reccomend buying a double headed iron instead of a single one. The secret is to refrigerate your bowl before making the batter, and keeping the batter cold....but please try them....they are wonderful. When I say that I am making Christmas cookies, this is the only cookie my family wants now....and I make them all year long.

Next time you’re doing donut holes, use the bottom of a sieve to hold them under the oil, so you don’t have to try and flip them.

Deep frying didn't happen very often when I was a kid either. So when I was on my own, I purchased an electric deep fat fryer. It looks like a restaurant fryer, except it's electric, the oil pan is removable for easy cleaning and it has a vented cover, so you can close the lid whilst frying to keep the spatter to a minimum. Because it's electric, it maintains the temperature that you select. No need for a thermometer. They even come with a basket that raises and lowers, just like the restaurant units. In cooler climates you can even store your oil right in the fryer. No dumping oil out or finding some thing to store used oil. They come in all sizes. So, just like your air fryer, get one to fit your family. Also, some of the larger ones don't have removable oil pans. Just like crockpots you want a removable pan so you aren't struggling to clean the inside of the pan built in to a machine that you can't get wet. Some come with a storage lid, but part of the reason I got mine was to reduce splatter, so I made sure mine had a vented cooking lid. 💖🌞🌵😷

I always wondered what you do with the oil after frying. You mentioned reusing it. What do you store it in? How many times do you reuse it? How do you dispose if it when it's done? Sounds like you are pretty knowledgeable about this cooking method so I thought you could give some insight to the rest of us?

@@julietaylor6080, when you deep fry with any oil, it picks up flavors of the food cooked. So I reuse my oil for similar foods. I fry all types of fish in the same oil, but use a different oil for chicken. And a different oil for frying veg, like zucchini, mushrooms, jalapeno poppers or okra. How many reuses? Depends on the type of oil, how high temperatures, how you store and what you have cooked in it. I look at it... If a clean pretty clear oil is now really brown and disgusting, I throw it out. If it passes the visual, I smell it. If it smells pleasant (something like what I cooked) I keep it. If it smells disgusting (like burnt chemicals) I throw it out. (Trust your nose... It will unmistakenly tell you when something is bad.) I will reused oil that has cooked mild vegs to cook strong tasting foods like fish. I live in the sunny🌞 Arizona 🌵 desert 🏜️. Because we are used to high summer temperatures, I keep my house on the warmer side... So I've had oils go rancid sitting on the shelf in their unopened containers. I've even had rice and flours go rancid, so I keep everything in the refrigerator or freezer. (Your nose will tell you if it's gone off.) If you live in northern Canada or similar places and you don't have those problems, you can store used oil in your pantry... Remember, all the bacteria from the foods (like meat) have been cooked out when the oil was hot. Always filter your oil before putting it away (I use a big coffee filter in a colander or strainer with my canning funnel). You want to throw away any crumbs left in the oil to avoid spoilage. Don't put them down the drain. When I pour fresh oil into my fryer, I save the container first, for storing used oil and then for disposing oil. Never pour oil down the sink. It will harden and plug your pipes. Back in the day when we thought plastic was safe, I'd store used oil in the fryer or in it's original bottle. But now that we know differently, I store everything in glass. But I still save the original bottle for disposing the old oil that goes out with the regular trash. Hope this helps. @@julietaylor6080 , here's an unsolicited tip: wash and save plastic or glass containers that come with foods you purchase... for stuff that needs to be thrown out, like used oil. My bff's mom would wash and save these "single use" containers and when you went to her home for dinner, she will give you leftovers to take home in these containers, so you didn't have to return them. She had her good Tupperware for her refrigerator. 💖🌞🌵😷

I learned a great tip when you need softened butter, don't put it in the microwave because it changes it to much, put a stick in warm, not hot water for a few minutes and it works every time.

For last minute softening warming up a glass of water and then putting the stick vertically under the empty glass works really well for me. Can literally pull it out of the fridge and have softened butter in minutes
