OMG! This is fantastic. FANTASTIC. I had some soy milk that needed used up, so I used that in the cream instead of the water. It worked well. Just double the cream recipe, its wonderful on fresh fruit! Thank you for this recipe! Also, I found you in January, I was crazy sick with celiac and my A1c was 8.6. I felt awful. fast forward to March and my A1c was 5.1 and I was down 40 pounds. I don't even know how that happened because I was eating everything I could fit in my mouth! You saved my life, thank you.

I made this instead of a birthday cake yesterday and it was delicious! The cakes turned out surprisingly soft and springy with a great flavor on their own. Tonight we are going to use blueberries on the leftover cakes because we ate all the strawberries but I expect the blueberry shortcake will be just as delicious!

Arrowroot powder will give you a clear sauce when heated whereas corn starch will give you a cloudy sauce, thats pretty much the main difference between them xx

If I want less calorie "whipped cream" I use canned pears, drained with few tbsp rolled oats and vanilla, blended the same nutribullet. Looks same, very neutral taste with pears.

How many cups do you use of the pears? This sounds like a good option. I’m guessing it replaces the cashews and dates so maybe 1 1/3 cup pears.

A cup of rolled oats does not weigh 80g. More like 112g. Glad I caught that. I'm hoping the other weights in this recipe are reliable, but not I'm not so sure...

I will try a vanilla aquafaba whipped cream if it comes out ok and for the sauce I will try mashing up strawberries and banana. Cashews dates grains all add up. I’m limiting my dates to one per day. I love this cupcake plan and mini is my thing and so smart to cut it in half for the sauce and some cream. I also wondered if I could replace the dates in the cake with same amount of banana. Otherwise I will try 24 deg let dates or less whichever fits in a 1/2 cup.

Hi Jill, say I varied your recipe because my wife didn’t want sugar in it. We both don’t like dates or figs. I used 1 cup of bob mills pastry flour and 1 tablespoons spoon of Orgain with everything else in your recipe. It turned out really good. My thinking is that Orgain (plant based). Would replace the sugar or dates. And I got a thumbs up from my wife. Next I’ll try your vegan whipping cream recipe. My wife is allergic to real or is it fake whipping cream.

If possible, for us newbies, it would be great to get more close-ups during certain parts for example, you say in the beginning to grind the oats but not too finely, but yours looked like pure flour to me, so I have no idea how fine to grind it. Or perhaps to mention what option on your Nutribullet and how many seconds, etc. I am useless, and need specifics. 😂 Anyway, love it, and I am probably the only one with these beginner issues. Thank you!

I use deglet dates which seem to make it a lighter color than using medjool dates. Also, the bright lights we use for filming and photographs make it look brighter

Instead of arrowroot powder can I use tapioca flour? Or any other substitute? Edit: Okay, I made it (with Tapioca). It kind of worked out, although I am definitely the parody version of this show. If you could see how many screw-ups occured in this seemingly simple dish, you would be on the floor laughing. Took me about 4 hours to get close to what you did. The cashew cream was delicious. The muffin taste was nice too but they seemed too short and the texture was a bit gooey inside and I was unable to properly slice the cap off without the whole thing almost falling apart. Wish I knew what I did wrong. Some of them fell to bits. I let them cool in the pan for about 15-20 minutes before trying to slice them. It was good fun though and I will try it again. Thanks Jill. I really love watching you cook. Sometimes I feel like making other dishes from other channels but I choose to make something I don't even feel like just to cook along with your show. The jazz in the background is nice too.

That is so sweet Marcus 😊 the muffin texture: you might have overground the oats . Sometimes baked goods don’t cook well in the middle if the oats are ground too fine.
