I love this recipe! I made it several times already. I have a friend who does not like bananas, so for the first time today I tried it with a different fruit and it turns out it works just as well with defrosted strawberries :o) Thanks Jill for all the great work you do! This pudding is so incredibly delicious 😋. I subbed 1 cup of the water with homemade almond milk and also added 1/3 cup almonds instead of cashews. My favorite pudding ever. So creamy. Thank you so much for this recipe Jill. ❤️

Hi l made this Banana pudding lam not vegan wanted to try things without oil and l usually dont like sugar glad you use wholefoods like the dates l love them. I do use chia seeds and l bought some flax seeds for the egg for one of your recipes. I eat alot of fiber food not turning vegan but lam loving how its oil free and wholefoods l love that. Difently wanna make more of your recipes. My daughter loves the banana pudding one.

I made this today and wow, its delicious. I used 6 fresh dates instead of 4 and the sweetness was perfect for us. Also added a bit of almond extract for the aroma. Wonderful recipe, thank you so much for sharing.

I bet it would be even better if you assembled the pudding with the cookies (alternating layers) and let it set in the fridge for 24 hours. Then the cookies would be super soft, and you can eat it with a spoon. Love the idea of the cream, too -- maybe mixed with the pudding to give you more to layer with.

Layer of cookies, layer of sliced bananas, layer of pudding/cream -- repeat again and end with a layer of cookies on top. Maybe in a casserole dish? That version may be best for a small crowd, but yum!

Even though I cooked it on the lowest setting and whisked it constantly, it still got brown on the bottom. I recommend cooking it in a double boiler or make one… a pot inside a pot of boiling water and whisk.

I just use it for demonstration on the show but I wouldn’t recommend it. The whole thing gets crazy hot so you can’t even touch it till it cools down 😐
