So great, I’m getting so disgusted seeing these best selling books by so-called nutritionists urging people to eat food that will kill them. I feel like going back to school to be a nutritionist myself, I’m really curious what they are teaching there.

For additional rising, use 1 T apple cider vinegar, stirred into the almond milk. It makes a kind of buttermilk that reacts with the baking soda. We never use salt, so for the salt in the cake batter, substitute Ener-G baking soda substitute, which again assists with rising. I will be making this into cupcakes (so much easier) and adding shredded carrot. Thanks for all of your wonderful work!

@@blk3118 I haven’t made them yet, so I don’t know. I’d start with grating 1 carrot. As far as baking time goes, let’s start with 30 minutes? and keep checking on them until they’re springy and light brown on top. My oven is a 1950 O’Keefe & Merritt, so my baking times might be way off compared to modern stoves. Since I'm going for a carrot cake type of flavor, I'd also add 1/2 tsp. each of cloves, ginger and nutmeg.

So made the cake just now. It's truly unbelievable! So tasty! And guess what, I completely forgot to add the dates to the cake, but it came out just fine. I guess the bananas were really ripe and the pineapple was quite sweet too. But the icing on the cake has to be the frosting! Pun fully intended! My daughter couldn't believe that it didn't come out of a Betty crocker tin! You are doing such an amazing job for all of us who are doing plant based nutrition. A huge big thank you! This cake is delicious. I made it twice already for birthdays. I suggest double checking the dates are pitted before throwing them in the blender and soaking the dates for the frosting. Also allowing the pecans to brown really enhances the flavor of the frosting. I also doubled the lemon juice for the amazing frosting and made lemon rind sprinkles. Thank you very much for sharing!

I was so inspired by this video that I bought ‘The Girl Who Chased the Moon’ at our Half Price Bookstore and made the cake using this wonderful recipe this morning. Its a sweet story and a quick read and just what I need now that were cooped up at home and the world outside seems dark lately. Hummingbird Cake will be our Father’s Day dessert. OMG I have obsessed over Hummingbird Cake for 30 years....lol. It is the feature so often in my southern magazines and books. I still have my Southern Living Cookbook where the Hummingbird Cake is the main feature of a Southern garden party. I found it to be an expensive cake to make. But this is like a gold mine what you've done ♥️ To have such pure ingredients and natural sugars is such a game changer. I will be making this cake next week for our desserts! And I've already written it down on a recipe card to go in my recipe box. Yes...lol...I actually still keep a physical recipe box in my kitchen. I keep my best loved and often used recipes in it....so my children will always have them also. I know this is behind the times of digital but it's nice to have the recipe in my box. Thank you!!

I have never heard of hummingbird cake, but I do love to read. So, I bought the book and read it and now, I’ve bought and finished her first book, too!! I love the stories. I just finished baking the cake and waiting for it to cool, so I can frost it. Thank you Jill, for not only a wonderful recipe, but for giving me another author to read. I know I will reread these books in the future. They make me feel good and they are perfect for getting my head and heart to a good place.

The name I learned was from an air line out of the Caribbean. The mascot was a hummingbird. After the airline closed the stewertesses saved the recipe that was served on board the air planes.

Just FYI for anyone who is concerned about GI. Once you blend up dates to nothing, the GI is really high. It is not as if you were eating a whole date, where the GI is much lower. Same with nut butters and pastes and smoothies.
