We feel so lucky to have found this channel. We had just got our wood fired oven completed two weeks ago. Your episodes will give us a lot of ideas. We wanted to make pizza and different kinds of stews, breads etc, but never really thought of putting oil in the pan and frying stuff like you did in this video. Please keep it up👍

Perfection. Well done Sir. Each step 100% accurate. I loved the camera shot 3:53 where you were carefully watching the fire/steak cooking and giving it your full attention. So many little things when doing this type of cooking that you capture in your videos. This really is the best I have seen on how to do all of this "correctly" (at least in my estimation). Your heat management translates to several other "old style" methods of cooking with live fire. Really first rate. Thank you for sharing. Best to you and yours. Pats for the pup.

Congratulations on your excellent videos and I love your passion for wood fire ovens, which I share. It’s all the little details that make such a difference and I’ve learnt many new things from your videos. In particular I always thought you needed to move the fire and coals to the side rather than the back in order to create a circular convection of air, but when I do, it becomes harder to regulate the temperature of the cooking In the way that you do by having the flames and coals in the back of the oven. Hello Nat. Thank you for commenting. I really appreciate it, and glad you found them informative. The only time I put the fire to the side is when I'm making pizza, primarily so I can see the side of the pizza that's facing the fire and then turn it when that side is done. It's harder to do that when the fire is at the back and the pizza is facing away from you. Having the fire on the side does give you more depth in the oven, but I still find placing the fire in the back gives a little more flexibility with temperature.

@@TheWoodFiredOvenChef Very good. That said.... temp was perhaps a little too high, I was at around 800°. Also, the wife marinated them for me and as such they had a good bit of butter on them. Because of this a few too many flames and ultimately char. Next time going to try a lower temp and no butter! Side note, I also baked some of the smashed potatoes. Worked so well my son actually ate one and he never eats potatoes! Thk you as for the ideas and inspiration as always!
