Soulslikes tend to be inconsistent with difficulty curve. Games like this are quite difficult at the start then it becomes easier. While it's an intentional theme in ds1 other games want to have smoother difficulty curve but don't do it properly. LotF is the same way - hard first level gets progressively easier

You need to parry more! Parrying lowers their posture which when at 0 gives you the option of kicking to stun them. After this you can use a visceral/crit attack on them, just like in soulsgames.

Elden Ring has a metric ton of options for armor and weapons, and Lords of the Fallen has a very large amount + the dye system. DS2 is often lauded for lots of options, even if the game has its many issues. By contrast, DS3 is sometimes called same-y with its weapons and armor, and Bloodborne only has a handful of weapons and armor sets.
