How awesome your farm animals and life is. I admire all that you do to provide for your family. Watching you feed Lucky is so wonderful. The other cows want to bond and get closer to you as Lucky has. I think she will be the one the others will follow in doing that. Curious little ones- calves that is--I do believe jealous of the attention Lucky gets so freely from you. They have seen how you cared for her from birth and up to now and I think they will and do trust you freely more so now then ever. They all are not to shy as they was some time ago. That is an awesome mill. Wow fresh bread oh how I miss making bread like I use too. My left hand isn't no good no more so I am not able to use it to do baking as I wish I could like long ago. Awww baby piglets will be fun for sure. I once stayed an a farm many yrs ago when I was younger at a farm I had stayed at in the summer time. Lots of us local city kids had a chance to spend a week on a farm to learn farming and see how things was. Anyway I stayed one winter and there 2 sows both we're expecting piggys. It was a blizzard snow storm that week so we all slept in the barn to keep watch and sure enough they both gave birth together. 18 little piggys was born that night. All of various colors. I will never forget that ever. We had to rush to take them from the mothers so they wouldn't rollover on them and put them under hot lamps to stay warm. What a real miracle to watch them being born. I will leave the choosing of yours to you. You know them better each first hand. I'm sure you will choose the right one. Your geese and animals are beautiful. All your farm is. How blessed you are. Thank you Lord for blessing my favorite farmer and his family Lord. Watch over them and bless them this holiday season and winter ahead. God bless you all always. Amen

I admire the ways you are making your homestead an earning asset. I do wish you would phrase things a little differently in the last two videos. You are not getting beef and flour for free. You are earning your beef and flour by the work you do to produce it. And you are getting paid for the risks you take with your production. The beef and flour for your family is your paycheck from the homestead. :-)

Karen MAcgyver2 At the beginning, Simeon was buying special milk for Lucky from another farm with colostrum in it. My understanding is it only does the baby good within the first week or so. Simeon was talking about using her for a milk cow along with the other baby that was in this vlog. I hope it works out. I don’t know why he stopped milking the other cow? Said their milk is extremely rich. More so than regular breeds.

I have a Mockmill that sits on my counter all the time so I can mill flour as needed,we enjoy lots of sourdough bread and the soaking process is so important to make the bread healthier. I'm so glad you are able to grind your flour to sell that is great. I have sold bread also for people that don't have time to bake. Lucky is looking great & I love your geese. We did have water powered mills, a few are still around. I live about s mile from this one: www.hilleforsgrynkvarn.se/ (site in Swedish only) and there's a group working on restoring it to be able to operate - got a new water wheel installed about a year ago, a major thing... A few hundred meters downstream there are remains (dams/foundations) of two older sites. Just where I live is a taller dam (now producing electricity, medium-ish scale), it, and the preexisting waterfall has been used for a long time,concluding for spinning and weaving cloth.

My grain mill is one of the best investments I have made to my family’s health. The wheat is more expensive but the flavor is amazing. My husband has health problems and by making everything from scratch I know what is in the food.

Does Sweden still have any water powered mills? Little Sweden USA, Lindsborg Kansas has one. It works, but not from water. It's difficult to clean.

I would be very interested to know what goes into your decision making on which sow to keep. I would imagine I would put personality and ease of care over more practical things like size and weight. Just for the peace of mind of having a sow that's not going to be difficult to handle because they're more adventurous.

So we really love sourdough for deep dish pizza. Just press it into a cast iron skillet bake 15min at 450f with crumbled raw sausage in it then add your pizza sauce cheese and toppings and bake for another 20 to 30, we go till cheese browns but if you crumbled sausage you could probably go less time.

It take 20-30 more minutes for the cheese to brown? Seems like 35-45 min at 450 would overbake the crust too. I love sourdough but never made pizza with it.

I supposed I should mention we typically use fresh mozzarella so a higher water content and we usually add a decent amount of veg, again more water. The main thing is sourdough deep dish crust with the sausage baked in it so the drippings mix with the dough while it bakes makes an awesome crispy crust

Final tip is press the sourdough into the skillet then put a sheet of aluminum foil or parchment paper on top then pour a bunch of cheap pinto beans or similar cheap beans on top. This will hold the crust down and prevent bubbles forming in the crust, this also works for pie shells. They sell ceramic "bakers beans" but the pinto beans last for around a dozen pizzas and cost around $2 so I've never seen the need, they will smell like beans while it bakes but the smell/taste does not permeate the crust

I have some of those bakers beans! When I went through the stuff at the house after our mom died I found them in the cupboard, had no idea what they were at the time, she evidently used them for pies. The sausage drippings flavoring the crust has me thinking this could be a breakfast pizza too, maybe some salsa, chopped red peppers, bacon and scrambled eggs added after it bakes. I have some sausage made from moose meat, time to experiment. 😁

Do you buy einkorn wheat? It's an ancient wheat that people have less problems with and I love to cook sour dough bread and friendship bread or cake with it. It's very expensive here. Most farmers don't grow it in the USA.

Great video! I have a question, why would you train Lucky to be a milk cow instead of Molly? Lucky has the health disadvantage of having been premature and not having her mother’s milk. It seems Molly would be a better choice, but I don’t know much about cows.

Cynthia Fisher The thing that frightens me is if they aren’t good mothers, Simeon sends them to market. Luckys mom was sick as well as wasn’t an attentive mom. He does away with the ones that might make his group genetically weak. I believe he said he wouldn’t breed her again? Lucky came from her. As a milker, she could be around for a long time. Maybe wishful thinking? I just love her I can’t think like a farmer. I think of her as a personal pet-

I'd say bred Mongo to the black with white band ,cuz it looks to be the most meatiedt n calmest ,plus she has wider backside n hopefully will have no problems giving birth to large piglets ,n she seems to have the longest back which usually gives you lots more babies that r born in head first with no trouble ....just an old hand at breeding many different types of animals,...lucky is adorable ....enjoy your videos always ...thanks n bless u n your family !!!
