I discovered this unforgettable soup when living in England and tried for years to perfect this. This is the tastiest soup I know and although the taste is bragging rights on its own, this soup is also a true tummy filler and make any cold evening a great and unforgettable occasion to look forward to. Serve with fresh bread and butter. I normally make this 4 times more and put in freezer, to enjoy during rest of the winter.
Ingredients:
250g Minced Beef
Olive Oil
1 Onion Roughly Chopped
2 Cloves Garlic (finely grated)
1 Red Pepper Roughly Chopped
1 Small Red Chilli (medium strength) Chopped
2 Teaspoons Cumin
2 Teaspoons Mild Paprika (smoked also wonderful)
1 Pinch Cayenne Pepper
1 Tablespoon Balsamic Vinegar
750ml Good Quality Chicken Stock
3 Tablespoons Tomato Puree
3-4 Bay Leaves
1-2 Tablespoons of Seasoning like the Kosmeester Kortes Braaimeester Flavour Meat Spice with Chilli (or salt and black pepper to taste) kosmeester.co.za.
400 gram tinned tomatoes
400 gram tinned kidney beans (drained and rinsed)
Method: As per video - Fry meat, onions and garlic for a few minutes. Add the pepper, chilli and spices and cook for 5-15 minutes. Add vinegar, stock, tomato paste, Braaimeester Seasoning (or a seasoning of your choice) and the bay leaves to the pot and cook for 5 minutes. In the meantime blend the tomatoes with half the tin of beans and add to the pot. Also add the leftover unblended beans, and simmer for 45 minutes. Make sure you stir regularly and also check nothing catches at the bottom.
Tablespoon = 15ml
Teaspoon = 5ml
