If you guys don't know most old japanese citizen dye their hair purple, idk the reason why but its something to do that white grey hair can easily seen dirty from dust or something that accumulated? @@SnozBerryQueen it was pretty good! I've had it at other places. His was fluffier. It might not be for everyone though some folks don't like wet eggs. But definitely a must try in Kyoto!

@@jeenpyoh ooh i actually heard from the youtuber samurai that Japanese elderly will intentionally dye their hair purple to hide their gray hair but still don’t understand why purple but oh well I personally love to think that they wanted to have purple hair when they are younger but people will think that they’ve become rebellious so they never did it but now that they are retiring or older, they can do what ever they pleased without people judging them much because they are old. But in some aspect of color theory, purple makes brazzy color whiter that is why when somebody bleach their hair, especially dark hair, they use purple shampoo to keep their hair blond and bright and not brazzy. I guess elderly like to make their white hair whiter as the purple dye fade.

I've been subbed to Motokichi since 2009. I love the guy and when I was in Kyoto, his restaurant was closed. I was bummed, but that's just another good reason to go back to Japan 🙂

My mum and I went to his little diner in Kyoto last month. I was intrigued how quiet and focused he was before his 'show' started. He is as much an entertainer as a chef. We talked a little after the show before his next set of customers arrived. He mentioned he had been running his restaurant for 42 years now and it's only been a few years since he started this crazy entertainment that comes with a time limit of an hour per booking. No doubt he gets more customers from this but somehow he looked a little nostalgic reminiscing quieter old days.

It's actually died purple because white hair gets dirty and becomes somewhat light yellowish so they dye it purple because purple is the opposite colour of yellow and it's also quite fashionable.

I’ve been here before! His omurice is delicious and he’s great at what he does. He let us take a group picture with him, which was really sweet. He has a few assistants who help him out around the kitchen too. edit: I’m glad he’s still got his iconic red beret too haha

@@Blueberry_Koi Pretty sure almost all the soldiers during the days of the empire would disagree. Japan was an ultranationalist empire where the emperor was viewed as a godlike figure, you can’t get much more “conservative” than that.

Aw I'm so happy he's still cooking! When the pandemic started and restaurants were struggling I wondered about how he was doing. I met him once when I was in Japan with my older cousins.

Depending on which method depends on the texture. The throwing it on method scrambles it. The tapping method creates a skin layer on the bottom. And if he cuts it he can do that because somebody might like the skin a little thicker. It's why people say it's the little things that customers like. And when it looks like something completely different than what you would think it's even better because people love privacy. Clearly he uses people's reaction in order to gauge what people would like so they can maintain a level of privacy. While still having the great satisfaction of well prepared food. Brilliant man well-thought-out.
