Made this for today's brunch. I didn't have green pepper so chopped up mild banana peppers. Threw in some fresh sliced mushrooms. Increased eggs to 8. It was fabulous! Thanks for the recipe. Sent it to all my daughters.

You can make this a ton easier by using a stick blender! Put your cottage cheese, eggs, cream, and spices in a bowl. Use your stick blender to mix it well. Pour over your meats, cheese and veg in the baking dish. Fold with a spatula and pop in the oven. Less mess and most convenient! Can't wait to see how mine comes out of the oven. Used bacon and sausage, mushrooms, grated yellow squash and chopped spinach. 🤤

I make a keto breakfast casserole which is 2 pkgs of Jimmy Dean sausage, cooked and placed in bottom of casserole pan that's been sprayed. Then I top that with sautéed peppers and onions and some cheddar cheese. Then I mix up between 8-12 large eggs and pour over top. Top with more cheddar cheese and bake at 350 for 30 mins. It feeds me and hubby for at least 4 days. It's great because we go to the gym in the morning and then have this when we come home. Can't wait to try this recipe. I season with just salt and pepper. Thanks Dave!! ❤️

I am on day #12 of eating low carb. I cut out Pasta,rice,potatoes,bread. Just until Christmas. The keto bread saved me after 5 days lol. About 6 days in, i don't miss any of them. I made a zucchini lasagna, was so good. I don't weigh myself, but i see a difference in my clothes. And my face is thinner. I still make my boyfriend muffins, cookies for his lunch. But if i get a craving for sugar i eat a piece of dark choc. Cures that craving. My mother in law is Ukranian, so i look forward to eating her perogies and cabbage rolls, this Christmas. But i think i will stick to eating carbs in moderation. I have to make this recipe sat. Morning. Love your channel😊

My mom was an excellent home style cook but it was difficult to learn from her because she NEVER used measuring cups or spoons. Her generation learned measurements using equivalents like the size of an egg or the palm of your hand. Very cool & no extra dishes. Consequentially, unless I’m following a recipe, I season by site. If you know what the spice tastes like, you can estimate the amount based on the size of your dish you’re cooking.

If you place the white bulb of the green top onions in a glass partially filled with water, on a window sill, they will continue to grow. You will always have fresh green onions on hand. You can also transfer them to a pot of dirt or plant in a garden. 👍 Works every time.

I'll admit I've often thought that you should wear a cut resistant glove on your left hand while you cut, Dave. OMG, my dad grew up during the great depression, and if i threw out a bunch of brand new chopped green onions, that man would dumpster dive, get them out of the trash, wash them off, and call it a day!!! I guess i must have a little bit of my dad in me cause i was mortified you threw out those onions!!!! Oh Lord, WE DO BECOME OUR PARENTS!!!!!! PS, i would take that frittata, slice it up, put it in a low carb wrap, with a little extra cheese, for a breakfast burrito on the go!!!! Yummy 😋

I'd be more concerned about germs from the cheese package (from people handling it, laying on a shelf or the conveyor belt, etc. ) being introduced into your food, than about the egg getting onto the cheese pkg.

Next time you over chop something like too much onions or peppers just put them in a freezer bag and freeze them instead of tossing them. That is such a waste of money. Frozen onions are great in soups, stews and anything that can sauté you just have to cook long enough to thaw them then cook. Makes it easier for those meals needing chopped things already in your freezer ready to go. Voila prepping veggies is already done

no, no , no! you do not throw away any veggie scraps! You either freeze them to use later in your cooking, or save them for the next time you make veggie stock or veggie/bone broth!
