I just made fried chicken of the woods from locally foraged mushrooms (western NY). I was absolutely shocked how delicious it was. I did not think it would be able to mimic the mouth feel and taste of a piece of breaded and fried chicken breast. I seasoned the flour with a onion seasoning from Trader Joe's, paprika, and some Mushroom & Company seasoning (also from Trader Joe's). Double dipped them in egg and flour and fried till golden brown. Even my girlfriend who hates mushrooms was shocked how much this mimicked fried chicken. Would 10/10 recommend trying to make these!!!

Not sure where you live now but these mushrooms are very common to find east of the Mississippi from south to north. They like to grow on deciduous trees (oak is one of the best). So while it's common to find them out west too, it's only relegated to diverse woodlands. Much of the west is conifer forests except the PNW which has a bit more biodiversity in trees (though still heavy on the conifer) and you dont want to eat a CotW from a conifer)

I went back last week and got another 50 from it this year. Our favorite is cow (chicken of the woods) nuggets. We are going to have to try this recipe now and see if it’s our new favorite. We have foraged and eaten over 60 different wild mushrooms here. It’s taken years of research and self educating to get to this point but it’s so worth it. Chicken of the Woods (Laetiporus sulphureus) and Lobster of the Woods (Hypomyces lactifluorum) are extremely hard to cultivate, unlike oysters or shiitakes. They are almost always wild foraged. With that said, they are not hard to find in the wild, depending on your location. Great video. I personally pan sear my CoW's before I bread and fry them just to be sure they are fully cooked and also impart pan flavor. And yes they taste almost exactly like what they are named for.

Just be careful with clusters growing on conifers esp hemlocks! Always try a small amount to make sure it agrees w/ you first. As for the recipe: def double batter! The first pieces of single batter I made shed most of it off. The double batter held up much better. They also bake really well but be sure to use a spray oil on the baking sheet & both sides as you cook as it will be much drier than full on frying.

Hey, try frying oyster mushrooms, they're really tasty. Just bread them with bread crumbs as you do with chicken, its a thing in my country. Please do try it! 😘

Hey, I've been wondering; are you actually vegan? Love your videos by the way, keep up the good work!:)

Hey thank you so much!!! No I’m not vegan! I was for years and then went vegetarian for over 10 years. I have a few personal health issues now that limits me. Now I just try to eat mostly a plant based diet.

Learned the alternative way to clean mushrooms...put in brown paper bag like from grocery store...a good amount of salt and some water and the mushrooms....close the bag top by clenching in the fist and than shake shake shake it....than open remove cleaned mushrooms and discard bag....

Hmm according to our local recepies you should pick young ones, scrub them, boil them, then do anything with them, haven't heard about preparing them without boiling (and disposing water)

Paul Staments referenced the GI issue and said that the mushroom is consumed by bacteria very quickly. If you trim off the discolored and soft portions that should resolve the issue.

This stuff is amazing! I found about 3 pounds of it last week and I've ate it for 7 days straight. It's THAT good. I recommend breaded/fried or sauteed with garlic, wine, butter, soy sauce, lemon juice.
