Before the strip was synonymous with celebrity chefs like Gordon Ramsay and Bobby Flay, it was where good, honest, gamblin’ folks went for a night of luxury on the low. In order to keep customers spending high, casino’s (like the Flamingo, ran by famous Vegas Mobster Bugsy Spiegel) would offer extravagant meals for a modest price, in the hopes of keeping clientele within the business. Thus, Las Vegas classics like the Prime Rib, Martini, and Shrimp Cocktail were born. So strap in folks, let me learn you a thing or two about old Vegas. 🤘🏼 Adam

O.G. Prime Rib:
4-5 Bone-in Ribeye Roast
Kosher Salt, to taste
1 cups Creme Fraiche
2 Tbsp Prepared Horseradish
½ bunch Chives, sliced thin
Kosher Salt, to taste
Black Pepper, to taste
Old-School Shrimp Cocktail:
12-15 medium shrimp
Ten cups of water
½ Lemon
½ Onion
2 Bay leaves
Kosher Salt
Black Peppercorns
Lemon Wedges, for garnish
Parsley, for garnish
O.G. Cocktail Sauce:
1 cup Ketchup
3 Tbsp Horseradish, more to taste
1 tsp Tabasco, more to taste
1 tsp Worcestershire
Juice and Zest of a Lemon, more to taste
1 Tbsp Vodka
½ Garlic clove, minced
Black Pepper, to taste
Kosher Salt, to taste
O.G. Dirty Martini:
1 1/2 ounces Gin or Vodka
1/2 ounce (15 ml) dry vermouth
1/2 ounce (15 ml) olive brine (adjust to taste)
Ice cubes
1 or 2 blue cheese-stuffed olives, for garnish

Pro tip: lightly seasoning with salt the ice water will help the flavors stay on the shrimp rather than washing out into your ice bath.

Yeah I was gonna say, I don't really see the point of bothering with court bouillon if you're going to put the shrimp into ice water right after. Court bouillon is going to add really, REALLY subtle flavor, the key word there is subtle, and submerging the shrimp in water after is just going to wash it away.

Love, Love, LOVE everything you made today! Martinis, with Hendrick's! Blue cheese-stuffed olives! My mouth exploded! And such a clever trick to de-poop the shrimp. The boeuf was perfectly cooked. I've been cooking it at 240* and am going lower from now on. However ... when you cut away the crispy fat, I could not suppress a tragic sob.😭

Prime rib looked amazing. Before I moved to TN I lived in NJ and on very special occasions would go to a steakhouse in Wilmington DE called Walter's steakhouse. They had what they call the Adam's cut. It is a 34 oz prime rib that was delicious.

Good food, try the garlic stuffed olives for a Martini, just amazing and the jalapeno stuffed ones for a spicey Martini, it works. All dirty of course.

No shaking the gin. Gin gets stirred. Vodka you can shake. I mean, do whatever you want if it's for you, but if you tend the bar you stir gin.
