I love watching your videos! You are hilarious, and you have some good recipes!! I'm a cheesecake baker and have some tips. 1. Leave the cream cheese out for 1 to 1.5 hours before having to add other ingredients. It's a lot easier to cream at room temperature. 2. Wait for the Cheesecake to completely cool, then refrigerate at least 6 hours before slicing into it. 3. Three day old Cheesecake is when it's the best (ie. cook on Monday, eat.on Thurs), especially when you are mixing it with other flavors like pumpkin or chocolate, etc....

The recipe looks delicious - I'm definitely going to try it. About LMNT, information has come out recently that it contains a significant amount of maltodextrin, and they were not disclosing that, which can be a problem for people who are allergic to maltodextrin or are diabetic. & they’re so stinkin’ pervasive. Seems like they’re everywhere & take up 25% of the videos. Yes, there’s fast forward, but it’s annoying. All that made me dead set against ever buying them, then the denial of maltodextrin made it worse. Maltodextrin has a higher glycemic index than table sugar, so it's completely antithetical that they're sponsoring keto channels. 😡

Yuppers. I just watched a few detailed KZbin videos regarding this. Including Serious Keto. And read several articles. Very sad. I’d pretty much say most KZbinr’s, like Dave, aren’t aware of this yet. I’m in Canada, and my daughter loves the stuff. Spends big $$ to order. Had to tell her about this. For ordinary people, it’s not great, but for me, being type 2 diabetic, bad news. Would certainly spike my blood sugar. And definitely NOT keto!!!

We use Dr. Berg's electrolyte powder. No weird stuff, tastes great, but only like 3 flavors. Plus it has higher potassium which we need.

Gonna have to try to make the crust with coconut flour as almonds are high in oxolate. I made the cottage cheese pumpkin bread and agree it needed more pumpkin flavor. So glad to hear the chocolate medley is available again at LMNT. We add a touch of cream to our "hot chocolate" and only use half a packet. Tastes delicious and more economical for us. I also use the chocolate LMNT in my keto ice cream cups.

vanilla question. Yes. BAking vanilla is Madagasgar variety which can be heated and still taste good. Strong flavor. The vanilla you should use in things like frosting, cold beverages, etc is Tahitian vanilla. Its milder, sweeter and does not do well if heated.

When you’re heating up in the microwave, make sure you use a glass container because the paper plate has a plastic coating on it, and it can be absorbed through the cheese

It would be a good challenge one day to try recreating a keto vegetarian minced meat to avoid textured soy and tofu. I once tried to make a sort of minced meat with cottage cheese, coconut flour, and eggs, and added smoked paprika, sautéed onions, and mushrooms. I’d love to see your version!

Dave, crack your eggs on counter top, not the bowl, you will have less shells, also, the eggshell half will remove the chips, if you remove the shell with the shell half. This looks amazing!!

I made this today but I totally butchered the recipe. 😂 I doubled the amount of pumpkin filling and added about 1/4 cup of cream to it and I omitted the cheese cake layer turning this into a basic pumpkin pie. Totally did the trick! Curbed my craving for pumpkin pie!! Thanks Dave. 😀

The only "requirement" for the sweetener would be that it should be granular - because you need the structure that that version provides. (BTW- make sure you use an allulose blend when you make the crust as allulose tends to "brown" very easily.)

Ooo I tried a food network low carb low sugar pumpkin pie. It had a pecan crust. It was pretty good the crust burnt in some spots and didn’t fully praline- ize but the filling was good and overall I’d try it again soooo… in case someone came across and needed an opinion 🦃

FYI: The raw LMNT and the sparkling version are clean. The flavored ones have maltitol. Some people experience bad side effects from that additive.

Also if i am mad it's because LMNT came out publicly and said their products DO NOT contain maltodextrin, so they lied, and when it was show that they do they tried to blame someone else when they are they ones that should be testing and making sure.

The bottom of your crust is so brown because allulose browns very easily. To avoid this in the future, use a different sweetener or use an allulose blend.

Crack the eggs on the granite counter or something else flat, and not the edge of a bowl or pan. The bowl drives shards of eggshell into the egg almost always giving you shards in your recipe.

Well shucks. I was making this recipe and got to the cream cheese mixture when I watched you add to measures of vanilla. Not realizing you were using 1/2 tsp measure. I added 2 tsp. I hope it tastes okay. Out of the oven and cooling now.
