Week 5 of the Three Rivers Challenge is here! This week, I made a mix of fresh, comforting, and nutrient-dense dishes, including:
A pear and goat cheese salad for a perfect balance of sweet and tangy flavors,
Mexican rice with peppers and chicken, a hearty and flavorful meal,
Chia pudding with kefir, packed with probiotics and a great way to use up pantry staples.
I’m continuing to stretch my ingredients while keeping within my $50 January budget and getting creative in the kitchen. This challenge has been such a great way to cut down on waste, save money, and appreciate the food I already have!
